Hey man this is a really cool vid, easily the best one i've found on youtube for modeling a head. I have a question if you don't mind - why do you start with a plane, subdivide it, mirror it and delete half? Is that something that aids you in creating the edge loops and ensuring that they are clean for rigging?
I am having a few troubles with rigging my head model because of strange vertex edge problems and I end up spending too much time fixing stuff. Thanks

Thanks! It sounds like you need to select the four verts around the hole and press F to created a polygon.
