If you were talking on the telephone while driving and missed your turn because you were paying attention to the phone call you may only realize it when you hang up the phone since your conscious mind was so busy. This is the same when it comes to hypnosis. Normally after a few mins. of no stimulus from the hypnotist a persons conscious mind will "Reboot" by itself.
I think it would be helpful to have more hypnosis videos that feature these types of instances. It can be disheartening to those learning to only see the flawless inductions and perfect subjects all the time. It gives a lopsided view of what real world experience offers.
Realistically, I normally will have the cameraman only start taping when i see a subject that i feel will work out very nicely. The type of dynamic street hypnosis that i practice is very difficult to screw around for long before i attempt an induction. However, i do have some blooper videos... Let me see if i saved them and i will post a few up :)

I've seen this done by NLP professionals like Derren Brown, and was wondering how well it worked compared to fully putting them under.

First Its not yelling, nor, in my opinion, is the word sleep any different then saying relax... As long as there is an expectation of what is going to happen the person will go into a trance...
Scaring the person is not part of it... The mind understands that "Sleep" means go into a very relaxed state... The hypnotist is speaking dirrectly to the subconsious mind at this point and as the subconsious mind does very simple tasks it just relaxes..

Well a handshake interrupt is much more then just taking someones hand and saying a few things... You first need to understand what is happining to the mind of the subject and understand how hypnosis works before attempting anything like this.

Actually in my experience they don't have to know nor do they have to trust you. They just should be willing... i have gotten myself into trouble with a friend for doing it without his consent, and after that mistake (when i was still just learning) i would NEVER hypnotize someone without consent again.
From what i understand, "Overloading" a technique to present the victims mind with too much sensory information at one time. When the mind is overloaded with this sensory information it goes into a hypnotic state.
"Confusion" is exactly what it sounds like. It is using contradicting statements to make the conscious mind "trip" (for lack of a better term)... the mind trips over its self and cannot distinguish reality from fiction.

Well the fact is i say quite a bit during that induction. I use quite a bit of speed in my speaking because i find that it helps confuse the mind a little. If you listen closely you can hear what i am saying. Not enough room to type.
