I used to think duels were cool. Then I started playing on Chaos...

If it's supposed to be 1 on 1, then why is is that every so often, a bunch of the enemy officers standing off to the side come out of nowhere and 3-shot my arse? I avoid them on Chaos because there is a ton of risk involved.

Nope, you go to them, they say a duel message like "Let us fight" and the soldiers/officers around surround you and the enemy officer, other enemy officers will join in and aid them for a few seconds at times, so will yours(more or less....), you CAN run by running out of the circle or knocking the enemy out, or getting knocked outside BY the enemy

Usually in the middle of a castle, the wooden stage for me, however, sometimes in the yellow turban mission, you get to duel in the middle of nowhere as well.

when your in a fight and a officers wants to fight you one ve one everyone moves away and they fight until one is defeat and they countine with the fight and it just makes it look real

Yes you can by simply jumping or runing out from the ring.

u cant really start is just random when a officer challenges u ur automatically in 1 unless u leave the circle

Well, I'd endeavor that the bow is made of a strong durable material to withstand damage in the case of having to fight close range. In Fable you could use the bows and crossbows to block melee attacks
