  • I think this video is slightly misleading. There is a rice called "Sticky Rice" (also called glutinous or sweet rice) which stuff like mochi is made out of. Most Asian rices are sticky, but the type of rice used for sushi and everyday Japanese meals is actually called Japonica rice. I'm almost positive that they are 2 different types of rice.

  • I don't have a pot so I just boil mine and it comes out the same, I let it set for a good 30-40 mins to cool before I add ingredients.

  • @MrMaxman87 thats because its not always 3 cups of water depending on the amount of the rice. A good technique to know how much water is to place your hand flat on the rice in the rice cooking pot, and fill it with water until the water level reaches anywhere right before your knuckles. It doesnt have to be precise.

  • i just made sushi and i didnt add anything to the rice! just alittle extra water, and it came out nice/moist and not too sticky either, it turned out delicous! ;D, so if your trying to half @ss it like me, plian rice will do fine, plus ik somone with a stickk up there @ss is ganna yell at me for this! but i used long grain jasmine rice too instead of short, ooppps! :) turned out beastin!!!!!!!!!!!!!

  • Washing the rice is pointless especially since you DO want it to be sticky.

  • The steps are fine with me. But I will use different amount of sugar and salt for different taste. I think adding extra sugar will be better.

  • @scolarskimbal Ha this is "specifically" a recipe used to make sushi rice itself, if you want to make the rest of the sushi involving the actual seaweed, seafood and vegetables then there are other instructive videos to help you do so. Otherwise this is not meant to be eaten alone, so "obviously" you would not like it. And to be even more clear sushi is eaten with fingers or preferably by chopsticks , if you want a real rice recipe then try fried rice;)...*smirks*...wow =.=

  • The amount of sugar and salt seem outrageous for one cup of rice. That has got to be wrong.

  • I have a question about the process of waiting thirty minutes after the rinse cycle.

    What is the effect of this?

    I've been a sushi chef for two years and worked under a fee chefs some of which scorned the waiting after the rinse. The argument was pertaining to the texture and firmness of the rice. I do think there is also a relationship of the quality and the age of the rice being used.

    Thoughts? Opinions?

  • OK, I just now made california rolls with this rice recipe because I had lost my previous recipe. It's good, really good for a sweet tooth, but a little too sweet for my liking. Still good though, I would say cut down on the sugar a bit. Still again.. very good. Thank you for sharing!

  • You can also use jasmine rice and tastes the same.

    Use 3 tablespoons of rice vinegar, 3 tablespoons of sugar and some salt (not required)

  • LOL @ me I break every rule when it comes to this. I stir sometimes and I do everything right under the A/C vent... I dont use the 50.00 wooden bowl ... So far is has worked out great. Im gonna try it the "right" way next time... If there is no difference Im going back to my way. Ive noticed they make thiers with a lot of love, "respect the rice" and "serve in two's" Ive heard.

  • mostly i let it stay in the pan for 2 3 hours, i dont use fan, also sometimes i dont even use vinegar, (mostly i do), bcuz i love soy souce while eating, vinegar doesnt change the taste too much.... the reason i dont stir is your reason, it makes it sticky and granulated.

    also you guys should try using kombu while cooking the rice. it changes it completely.

  • All these sushi how-tos are just one person's version or recipe. You can use a number of different things for your vinegar beyond the recipe here. You can stir or fan your rice or both. Slashing just sounds silly, I deal with sushi rice every day. I wear oiled vinyl gloves. This prevents TOO HOT OR MOIST RICE from sticking. What the stirring and fanning does is accelerate the evaporation of the moisture from the rice. The end result is pliable rice that doesn't disintegrate the nori.

  • yeah sushi vinegar is just pre prepared, you don't need to add the sugar and salt...you can use sushi vinegar

  • you NEVER stir sushi rice!! it makes it too sticky and therefore harder to work with. You should always slash or cut the rice in the bowl with a paddle. Slash it for about ten minutes while fanning it until it reaches room temperature.

  • @AngellGaby Try to use red wine vinegar or for some people apple vinegar has worked (not a favorite of mine) just experiment with different vinegars and youll find one that you find to be decent or even better.

  • The normal rice you usually eat (or at least me) is Long Grain rice. From what I heard long grain rice won't be as sticky as short grain or sushi rice.

  • You can use either or, but there is a special "sushi vinegar" you can buy. If you're going to go to the lengths of buying that then you might as well get some dried kelp to add to the rice when you boil it too.

  • You should never add the vinegar when the rice is still hot because it absorbs the vinegar,You want the vinegar to coat the individual rice granuals on the outside. So fan the rice(putting it in the fridge helps)and add the vinegar when the rice is luke warm.
