My Grandpa had a meat market in L.A. that he opened in 1928 and my Dad and I both worked there from the time we were both about 6 years old. We started cutting meat at about age 10 and did it just like in this old movie. We didn't ever use a band saw to cut, Grandpa thought they were too dangerous, so we used nothing but butcher knives, meat cleavers, and a hacksaw to cut meat. Even in his 80's, my old Grandpa could still handle the cleavers and knives like a pro. I miss those old days.
LOL! You can tell it was a different era cause he called the other cuts cheaper! ... But I live in New York & I can tell you, a brisket sandwich from Kat's deli is NOT CHEAP! LOL!... i want a brisket sandwich now!
