Something has been bugging me..there were only 7 bosses up to this point right? Does that mean one of these stages doesn't contain a boss? Or will the game shove in a new boss for that stage?
The last stage is a joke stage which you can win fairly easily, it also says in blocks "thanks for playing" which is the main reason the level is there, to thank you for getting so far :)
If there is a boss stage for world 8, I don't know cause i'm not there, I've just finished world 8 stage 1, 6, 8 (working on 2) xD
I think you'll be able to figure this out raocow, although there is still a lot of level to go (might be tough fitting it in for tomorrow). As you said, once you figure out how to do each section, the timing remains the same, and that section won't bother you again (unless you screw up the timing).
There is some tight timing ahead though, and you'll have to trust Marisa/Alice to just barely make it though a couple sections.

To be more precise, it's Sakuya's World and Killing Doll. So yeah, those aren't good news.
But if you noticed, there are knives ONLY at the beginning and at the end of the stage. I haven't beat it yet but I noticed there's a danmaku surprise at the end.

Maybe it'll be like boot camp and after the first 4 or so levels they figure you aren't going to quit at this point and it'll get easier.
..But probably not.

According to the stage description this stage is based on sakuya's Killing Doll. Easily one of the most difficult spellcards in all of touhou
