I have to tell you though, that nothing compares to a steak made of freshly slaughtered pig. NOTHING.

So there is nothing shocking about this, we make other weird stuff they could have shown, e.g.: véres hurka, which is essentially a sausage made of cooked meat that is shown at the beginning mixed with pig blood, or a traditional meal served at pigkillings (as we call it): the fried pig blood :)

I don't know what is the problem. Hungarian sausages and black pudding are all over the world, from China to the USA... You definitively shouldn't eat American pork raw, but in places where they actually take care of and raise the pigs, it should be relatively fine. The worms get spread by bad hygiene, and in American farms the pigs just rot in their own feces and spread them all day.

Raw meat does have other stuff you need to worry about though, like bacteria. It may be fine to taste it, but I wouldn't make it a regular part of you diet.

haha this is the way our cook at our restaurant used to see if the meat was seasoned correctly. It was a Hungarian restaurant and she was from a small village. That is a very old custom of tasting for seasoning. My family came fro a small village in Hungary but we are not Romas! Romas are not Hungarian-they live in Hungary and adopt some customs but they are not Hungarians. Just like Jews are not Hungarian, they are Jewish and have their own customs. The sole purpose of eating raw meat is tasting it. After achieving the perfect taste the meat is filled into the casing-usually cleaned pig intestines-then the sausages are taken into smokehouse . Sausages, bacon are smoked for 1-2 weeks. I suggest if anyone who visits Hungary try to get in touch with people who sell homemade smoked meat and try what real homemade smoked sausage, bacon taste like without any artificial additives.

Actually they give the pigs anti worm vaccines... And they do not eat the raw meat, that was the preparation you just saw. They add several spices, salt (sometimes rice) and make sausages from that mixture. I can assure you it is totally harmless and tastes good :)
