I also added 4 garlic cloves along with the mira-poix, and I also deglazed with red wine and about a cup of beef stock that I had leftover. I also finished the bolognese with about a 1/2 pint of heavy cream. It was amazing! Thx for the lesson!
Oh one other thing from your page. I also added about 1/2 tsp of red pepper flakes. Awesome Bolognese. It was the best I've ever had. Yes! tomato paste is the way to go. I used to small cans and plenty of water and reduced. No canned tomatos here. Tomato paste is the way to go. Keep it real peeps!
I'm always conflicted watching this show. I really love the food she makes, so I watch it. But I think she just tries way too hard to be "zany" or "kooky". It doesn't come off as natural. It comes off as really forced to me. I'm not sure why all the FN shows are now about crazy peronalities rather than just instruction, because they all take it way too far now. She seems like a cool person, but I can certainly live without all the grunts and random noises.
@katiemc66 yeah i hear you. at first i first couldnt stand her then one day i was watching her with my 10 year old nieces and we all started laughing at her and now we all love her. she really grew on us and i LOVE her now. the grunts and noises are what make her memorable i guess. id much prefer to watch anytime instead of that boring chef, Giada with zero personality

I cook with kosher salt all the time. It's not "less salty" than regular salt. It's chemically identically to regular table salt, except there's no iodine added.

There is no chemical difference. The only difference is the shape salt itself. Table salt is little cubes, kosher salt is flakes.

Traditional Bolognese doesn't have any whole tomatoes in it. Tomato paste is the only place to get tomato flavor from.
