He's using a loop pedal to build up layers under his singing... he starts with a beat by tapping on the guitar, and adds layer or two of guitar, before singing and playing along to it.

This show needs changing people are getting bored. Simon needs to go round some pubs getting drunks on. Employ a few heavies incase it kicks of. The show will have to go on 10 O clock + and 18s over. People want to see swearing and punch ups. I hope someone sees this and does a adult britians got talent.
