Hi Manjula Aunty, is it possible to OVER knead chapati/roti/paratha dough? Also, how can you make sure they come out soft and chewy, and not hard? Thanks!
I dont know what you mean by over kneading the dough it is always good if dough is knead well so it is soft not sticky to your fingers. When you are rolling the paratha do not use too much dry flour and do not cook paratha on low heat.

I use whole-wheat flour mostly Laxmi or Sujata brand many others are available you can buy from Indian grocery store.

Roti is a general term for breads. Paratha is a specific type of Roti.
