  • is there any shortcut way of doing hollandaise sauce?

  • clarified butter is better. it emulsify the sauce you are making. just saying :)

  • @apibodoh doesn't make any difference

  • really well made, new sub here

  • @ResidentRetro Thanks so much and thank you for the sub :)

  • I love all your videos they are CLEAR,CLEAN and Informative.. Keep it up!!

  • @2106Ladybug Thank you..I appreciate it :)

  • I tried the recipe but it came out pretty thick how did u do it with ur consistency?

  • @132vic Hmm tough one....i really don't know what you did...could be the size of your eggs...could be the butter. but if you follow the amounts on the video..you shouldn't have a problem. :) thanks

  • Does it matter if it comes out thick? Mine came out a lot thicker than yours did

  • What is the sauce supposed to look like?

  • @popkorn66 If you cant tell from the video the sauce should be shiny and bright yellow in color. It should be be thick enough to briefly hold a "ribbon" (also shown in the video). Another way to tell if you have the right consistency is if it will coat the back of a spoon well. Everything should be well emulsified also (so you shouldn't see bits of melted butter or god forbid chunks of accidentally scrambled eggs)

  • Gold! Looks awesome.

I notice you live in America now, are they more fussy about runny eggs over there? You can't beat a runny yolk!

  • @Cenotaff Sad to say but yes....more fussy...and you cant beat a runny egg...I agree

    cheers

    Steve:)

  • Hi !

Thanks for the great video, clear instructions!

By chance, is there a non-alcoholic substitute for the white wine? Thank you

  • @yeusmarn13 Thank you..the best way to go is non-alcoholic White Wine you can buy from the store...vinegars contain some sort of alcohol....hope this helps

    Steve:)

  • I watched the video, but wondered what is best ham they say Canadian bacon, does it really matter? What type of ham do you use?

  • @Silveryfox616 Not at all..I just used Canadian bacon because I like it....its your choice....use what you want to use.

    thanks for watching

    Steve

  • i have question in the part where you poached the eggs, after you cook them arent you supposed to put them on water w/ ice to stop the cooking process?

  • @wikinic Depends when your serving them. I did this in real time so it wasn't necessary.

  • hmmm... i made eggs benedict yesterday for the first time in my life. They turned out beautifully :) Thanks to you ! Greetings from Denmark

  • @purzelastro thank you so much. I am glad it turned out well for you. thanks for watching! -steve

  • ok...dumb question. are you supposed to use all of the butter?

  • @trav1s27 No its not a dumb question.....yes you use all the butter for the hollandaise....thanks for watching

    Steve

  • @stevescooking it seems like everytime i use all the butter it doesnt come out thick, very soupy like consistancy. Are you supposed 2 yolks like in your video? Or do you use more? thanks Travis

  • @trav1s27 The most important part of the hallandaise technique is whisking. yes 2 eggs to make the sauce..also be careful how much lemon juice you squeeze with the wine. It could be the size of your eggs. I'm not saying its an easy sauce to make because its not. just practice and you will get there..I hope its successful for you.

    Steve

  • can you use something else besides ham?

  • @HKISfreak1 sure...spinach, salmon cakes, bacon, crab meat, asparagus, roasted tomatoes....anything you want really within reason.

    Thanks for watching Steve.

  • Hey i just made it and my family was like OMG, it's so good, but then i said i learn't it from you thanks alot bro!
