Why does the second defense usually differ from the actual technique, ie:here the 2 ending kicks?

I think it is because the 1rst kick (actually a suggested sweep) didn't get the result he was looking for so he changed it up.
But it is written the first way with the sweep and the downward diagonal roundhouse kick.
