  • You can clearly see he is not a amateur, by the fact it is a restaurant and not a home, he is using a stainless steel worktop, large restaurant cutting board, a sashimi knife, he's wearing whites and the maki mat is wrapped in clingfilm, i don't how all you sushi chefs where trained but i bet when you were taught, the chef didn't just spend 1 minutes showing you how to roll a maki, Its not a race when you are demonstrating something, That was a weird way to slice a maki at the end.

  • Wow, some really pretentious comments... I say good job to the video poster. Besides, I don't want to watch lighting fast sushi making. This was obviously posting for passing tips along for at home sushi amateurs. Again, good job. My only tip is use your mat once more when you put the avocado on - not too much pressure as to make the avocado mushy, but that will help keep it together when you cut. Well put together, and nice presentation as well.

    Si vas con esa velocidad en el restaurante se te acumularan los pedidos, la velocidad en un sushiman es tan necesaria, como el buen sabor del arroz, en este video se aprecia tu velocidad y parsimonia, lo que da a entender que o eres amateur haciendo sushi, o que estabas cansado ese día, tómatelo como una crítica constructiva.

  • @WolfPackNJC yes it is...you can see the hole in the middle cuts where the pit would be as he is cutting it.  And you can see the fatty buildup leftover on the blade when he cuts the next slice. And its thats not enough proof for you..google caterpillar roll...avocado.

That must be one very clean and unripe avocado. I'm a sushi chef at Hayashi-Ya in Brier Creek, NC and work with avocados all the time. I could be wrong though.

  • only fried shirp, unagi, avacodo slices, spicy sauce, eel sauce, and masago and this person takes 7min. Wow, now how does their customer wait for their food. I used to be a sushi chef and can push 3 special rolls and less then 5 min. beside he can't even set the caterpillar correctly. lay like an S, put the sauce on it first,sprinkle the masago and not the way how he did it, and cut two small antenna using sprout and there you go a caterpillar roll.

  • @minimoongurll I thought it was perfect. Esp. in the beginning when he cut the avocado. Those were perfect, thin slices. I mean, I'm not a pro... but I was an apprentice chef, so I at least know what to look for and his knife skills were wonderful.

  • @lion246lamb Esp. when he cuts the sushi , it was extremely unstable. he litterally pressed down the roll with his knife, rather than cutting it off at one slice by utilizing his blade. He does not yet rely on the sharpness of the blade.

    Avocado cutting requires 10 seconds or less. it took him almost 1 minute as he's relying on his left thumb to support. and he repeatedly pushes/pulls his blade. he even throws the end bits.

    BUT i hope he's way more improved by now.

  • The orange sauce aka spicy sauce as it is labeled in the Tsunami Sushi restaurant recipe is chili sauce or chili powder mixed with mayonnaise. You can use spicy curry and mayonnaise for a more yellowish look or make your own special spice combo to mix with the mayo.

  • Nice video. It'd be easier to use half the avocado by cutting the slices thinner making it stick to the rice better and balance out the avocado taste. Your knife needs sharpening also ;] .

    Oh yea for meganjerlo, you can mix mayo with sriracha, tobiko (masago/fish roe) and a little japanese chili powder (the one with blackened sesame seeds). That's how we make it at our restaurant. =]
