i hope this isnt a dumb question, but does that layer of fat on the top act help to as a barrier against germs in the air(vaccum space) that is left in the jar? ive seen wax poured on top of jam preserves before and thought it might act in the same way as the wax. thanks

The Egyptians were canning thousands of years ago. I'm not sure if they sterilized, but they covered meat in honey or a heavy vinegar solution. The honey would block out air, making it Anaerobic and what germs like vinegar? Lol ~ Foods and bodies have been found preserved in honey in many Egyptian tombs.

Hey there, I'm 34 and was lucky enough to can with my great granny when I was a girl. They were from the great depression generation and they canned everything, even had a huge, really nice root cellar. I remember many years sitting at the kitchen table snapping beans while helping my granny and mom while they had 2 canners going at the same time :-) I don't understand why people act like food storage and canning is extreme, gross or strange. It's nothing new people!!!

Thanks for the video. It is good to see there are still people out there keeping prepared for emergencies, or at the very least wise enough to save good food and money. I learned the basics of hot water canning from my mother and grandma, and I would love to give pressure canning a try.

he might be a smart aleik but hes right. My grandfather told me that canned meat will keep like 5 + years. and hes a butcher. He is a dang good butcher too! hes 85 and can butcher an entire side of beef in no time flat. Like a ninja!!!

in our freezer the night before to keep the freezer/fridge cold and food from spoiling.
My grandma canned everything when we were kids and we were glad to have canned food.

My point to all reading this hes right I have eaten pickles that were canned 5 years prior and we so poor we take the bands off after canning and use them on next batch only using new lids each time.

You said in your one year video you only pressure cooked the meat for 45 minutes. Does that go for cooked meats too? I'm hearing on another site that you have to cook pints for 75 minutes and quarts for 90. Is this true? Im hoping you are right and it works for both cooked and uncooked, or i have a lot of food to throw out!
Love it, have been canning meat along time. Last winter began canning stew, after the first load I decided to not put potato in, just cook at last min. before serving. When I make stew to can I make a lg. pot of gravy, then stuff the jars 1/2 full of raw meat and put any vegi in, layered, and fill up with gravey then can it. Excellent and great for the dinners i'm to tired to cook.. Great job, keep it up, very informative. Thank you for spending your time to help us!

I boil a whole chicken, then pick the meat off the bones so I don't miss any good bits. I can it in pint jars filling with broth from the pot(fat drained off). It's a very lean chicken blend, good for stews, tacos, casseroles, sandwiches, dumplings,alfredo, etc. My oldest is from 11/23/09. I buy a chicken for .$89/lb and get six pints. For $3.50 I get the equivalent of six cans of storebought chicken which costs around $12 or more. So Worth it. Kudos Hillbilly! Thanks for all the videos!

I just pressure canned my first 6 cans of roast last night. One lid did not seal and I ate it . Really great flavor and tender. So easy to do, and good way to buy large discounted amounts of meat and not waste any. Your dog sounds like he is crying for a bite of the meat. can't blame him, its gooood. I've done chicken, meatballs, meatsauce, chicken livers, pork shoulder, chuck, sirloin, brisket, ham, sausage, and hot dogs. DO NOT TRY SMOKED HAM-the smoke flavor becomes distasteful. Hot dogs turn into mush. Chicken livers tend to crumble after 3 years. The chicken is AWESOME.

I've been canning Ground Beef for a couple years now and I also did some Chicken. The GB came out great. I haven't tried the chicken yet, but it's been about a year so I'm gonna give it a shot. And you are so right. Our grandparents canned everything during the Depression. We have Amish neighbors and I asked them about it. They have been canning meat for years. I wish our parents had thought more about teaching these skills to us instead of having to learn it on the internet

@DixiePrepper Chuck is shoulder. I didn't know myself until I typed "butchering diagram, cow" into google to answer your question. Pretty simple and you can do it yourself.
When I was un the US Army doing KP duty in boot camp, a dude in a US Army car would show up with canned meat from the 60s in the trunk to give to our Chow Hall, and this was in 1998. Alot of people just dont read or know it can be canned for long periods of time..

@h4xx0rrx He said just salt for flavor. There is no need for preservatives when canning. The food is heat sterilized in the sealed jar. There's nothing left to preserve it against. The canned stuff you get in the store may have extra preservatives but that's for superfluous things like color. Of course that messes up the flavor.
Greatgrandfather used to makes and can sausages and meat. It's what people used to do before refrigeration.

He canned a lot of fish to make fish patties with, they were great, I miss all that now.

I found these intresting. How long did you keep it in the preasure cooker, For meat is this longer then spinish or some other vegatable. I sort of wish you had made something out of it rether then eat it from a jar but I guess that proves to the doubters that you are eating it.

You said in your one year video you only pressure cooked the meat for 45 minutes. Does that go for cooked meats too? I'm hearing on another site that you have to cook pints for 75 minutes and quarts for 90. Is this true? Im hoping you are right and it works for both cooked and uncooked, or i have a lot of food to throw out!

Love it, have been canning meat along time. Last winter began canning stew, after the first load I decided to not put potato in, just cook at last min. before serving. When I make stew to can I make a lg. pot of gravy, then stuff the jars 1/2 full of raw meat and put any vegi in, layered, and fill up with gravey then can it. Excellent and great for the dinners i'm to tired to cook.. Great job, keep it up, very informative. Thank you for spending your time to help us!

Oh my Gods you are so awesome. I wish more people knew the practical side of canning instead of the ridiculously overcomplicated book knowledge out there. What would you suggest for people who don't have any pressure canning pots, etc.--just pots and bottles? I've seen an italian gramma cut out lots of steps and be just fine.

I boil a whole chicken, then pick the meat off the bones so I don't miss any good bits. I can it in pint jars filling with broth from the pot(fat drained off). It's a very lean chicken blend, good for stews, tacos, casseroles, sandwiches, dumplings,alfredo, etc. My oldest is from 11/23/09. I buy a chicken for .$89/lb and get six pints. For $3.50 I get the equivalent of six cans of storebought chicken which costs around $12 or more. So Worth it. Kudos Hillbilly! Thanks for all the videos!

I just pressure canned my first 6 cans of roast last night. One lid did not seal and I ate it . Really great flavor and tender. So easy to do, and good way to buy large discounted amounts of meat and not waste any. Your dog sounds like he is crying for a bite of the meat. can't blame him, its gooood. Thanks for the excellent tips.

I've done chicken, meatballs, meatsauce, chicken livers, pork shoulder, chuck, sirloin, brisket, ham, sausage, and hot dogs. DO NOT TRY SMOKED HAM-the smoke flavor becomes distasteful. Hot dogs turn into mush. Chicken livers tend to crumble after 3 years. The chicken is AWESOME.

I've been canning Ground Beef for a couple years now and I also did some Chicken. The GB came out great. I haven't tried the chicken yet, but it's been about a year so I'm gonna give it a shot. And you are so right. Our grandparents canned everything during the Depression. We have Amish neighbors and I asked them about it. They have been canning meat for years. I wish our parents had thought more about teaching these skills to us instead of having to learn it on the internet

When I was un the US Army doing KP duty in boot camp, a dude in a US Army car would show up with canned meat from the 60s in the trunk to give to our Chow Hall, and this was in 1998. Alot of people just dont read or know it can be canned for long periods of time..

Looks good to me. I picked up canning about 2 years ago, and I would eat that.
There are more than enough things online to tell you how to can things to keep you from getting sick.
This process isnt new ;-)

You can make a beef stew or soup chicken soups etc.
Poke around on youtube or google some recipes.
I've canned meat sauce, beef tips in gravy and it comes out great.

@h4xx0rrx He said just salt for flavor. There is no need for preservatives when canning. The food is heat sterilized in the sealed jar. There's nothing left to preserve it against. The canned stuff you get in the store may have extra preservatives but that's for superfluous things like color. Of course that messes up the flavor.
