@Solingen1000 Yeah, when they hire an actor for the show, that one actor gets numerous roles through the season, they have that specfic actor come in the studio and do ALL the scenes that actor has for the season at one time.
well i hate to say it but when i don't have all that good flavor i just through some diced bread meat egg water thyme parsly onion and garlic in a bowl and roll them right into a nice sauce and cook for a 1/2 hour 1 hour if im not hungry at the time(simmer)

Obviously Alton has not read Henry Hill's The Wiseguy Cookbook (though Henry Hill is only half Italian if you want to make that argument). Hill offers an awesome, simple meatball recipe learned from his aunt, and they do indeed float in red sauce -- Sunday gravy, as Hill calls it. Also they are a lot better and easier to prepare than these. And the spinach... wtf was he thinking? Substitute it with fresh basil and/or fresh mint. Much, much better with a more unified flavor.

Interesting mix of meats. I'm not generally a big fan of lamb, but it looks like it would work well in this particular recipe.
