@RobinBenzle Yes they are totally agree, just one tip for you, when frying them sunny side up. Crack them and put them into a small pouring jug, heat you pan as normal, then tip them out one by one. Save messing with the shells to much. As for the boiled eggs, try rolling them in mixed herbs and spices you will be amazed at the taste. By the way your salad looks tastey!!

So, if I was to peel the eggs straight from the boil, would I get a creamier egg?

Sorry Robin, don't mean to burst your bubble, but I raise 3 different kinds of quail. Those speckled eggs are not out of the Bob Whites. The speckled are out of either the Golden masked, Texas A&M, or the Brown Pharoah. The Bob White eggs are actually solid white.
A good way to peel hard boiled quail eggs; after they are boiled, run cold water in them. Next, cover them with white vinegar and let stand about 12 hours, rinse with cold water and peel. We pickle up to 250 per week.
@Gma1456 make sure you drain the water before covering with the vinegar. The vinegar eats away the hard shell and leaves the tough membrane making it much easier to peel.

They serve a tray of petit fours, including quail eggs. Oh my! They are delicious! Tour the grand house (Vanderbilt's) and enjoy tea in the tea room while listening to classical music (live pianist). you should look up "tokneneng" aka "kwek kwek"
its a filipino "street" food. but i love making it at home. its basically just flour, annatto seeds/powder, some salt, some pepper.
coat it in the batter and then deep fry.
dipping sauce: vinegar with fresh chili, garlic, and onions.
its delicious. simple and cheap

Please note that the egg you are holding is not from a Bobwhite!
Bobwhite eggs have no speckles on them and they are completely WHITE!
You are holding an Egg from a Coturnix Quail, Japanese Quail, Texas A&M Quail etc.
