I totally agree with everything you say. Music is not just about lifting Notes off a page, I was taught that music has 3 energies, The Mental Energy for concentration and Ability, Physical Energy for the way you play or how you play the instrument and its obvious size and technique on how you play, then the most important one of all is the Emotional Energy, the passion and feeling you apply to the notes you play. Too many teachers give a blank definition of music.
