he cooks the outline and details of the face first so it get's darker then fills it in.

@MrStuckyJ i realise your comment is from 10 months ago but what he does is use a thick pancake batter to make the shape as it hold together better and takes longer to cook then he uses a thin pancake batter to fill in the holes and it takes less time to cook so it doesnt get as dark as the outlines

@MrStuckyJ Its easy to do with pancake batter in a squeeze bottle. Do the outline first and then fill in the design with a small ladle or a squeeze bottle with a wider tip.
