  • @Teody41 This is a quick, non-bake version of Lamingtons. No baking is required because I use a bought cake ;)

  • Hi, Is there always strawberry jam in the Australian Lamingtons?  In South Africa, we make it without the jam in the center. I'm just wondering?? Thank you for sharing all your lovely recipies with us.

  • @Craftylizette No, the jam is optional. You could also use whipped cream for the filling ;)

  • @nycmeemz this is very similar to what is served in the "High Brow" restaurants. Only difference is they usually use raspberry filling and yellow cake. David has actually given us a lighter chocolate coating. Others use chocolate frosting.

  • The best way to coat them in the chocolate is to use a high cup with the diameter just about the size of the lamington. Then use a fork, dip them into the chocolate.

  • @theadorjespert the main thing about cooking is that you can swap things for example you can swap the jam for maybe a thick icing or cream and the coconut with some extra cocoa powder or almond powder

  • doesnt going to the supermarket to buy the sponge cake defeat the purpose of making lamingtons, when you can just easily pick it up when its right next to the spongecake. or atleast usually in australian supermarkets like woolworths or coles that how it is.

  • @charlie11012009 Not really, I find the shop bough lamingtons are usually dry and tasteless. These lamingtons are moist with a real chocolate flavour. Plus, it's a great kitchen activity if you have bored kids!

  • made my sponge wiv sponge mix, added some expresso powder on the chocolate mixture, used less sugar n topped it with roasted brazil nut. . . heavenly!!!

  • This is the most understated desert in my life. When I see it in recipe book, I always say ''meh..'', too simple, not tasty enough. But everytime I decide to make them, I can't stop eating. The chocolate makes such nice combination with soaked cake. And the coconut on top just makes it 10x better.

  • @McKayrin14 Not really, as the coconut is a fairly integral part of the recipe. Perhaps someone reading this has some interesting substitutes ;)

  • @jillmdejesus It's Desiccated Coconut, so unsweetened. I must admit I've never seen "sweetened" coconut here in Australia. Sounds interesting :)

    Mak me remember another recipe that here in Brazil we call "frozen cake". Sponge cake ( yet hot ), mixing 200 ml coconut milk and 1 condensed milk, cut the cake and apply this mix, after to put coconut, made a package using metal paper ( lamined paper from kitchen ) and let on the freezer for 2 hours.

    Looks like these and the flavor isamazing.

    I'll try lamingtons in the next saturday. Thank you for teach !

  • I saw that AverageBetty lady make icing the other day by adding a little milk instead of water. Sounds like it might give it a nice creamy taste.

  • You should add the water to the icing after you mix to get the desired consistency. Seemed a little runny.
