"Pain experience in hermit crabs?", and Nocieption or pain in a decapod crustacean" both studies were published in The journal 'Animal behaviour' and both studies were conducted by Professor Robert Elwood an expert on Animal Behaviour along with his colleagues.

If the cray had been frozen, it would have just shut down, induced hibernation which means it dies rather painlessly.
They can still be alive out of water for quite a while.
Though if they are out of water it is best to wrap them in a damp cloth and place them in a darker area.
Also if you cut through the brain, it dies very quickly, any twitching is what most bodies do when muscles spasm, post mortem.
Have to learn this shit when training to be a chef. Crays can shoot their claws boiled.
