I have a tip for slicing the corn off of the cob: get a bundt cake pan and set the corn standing up in the hole. It gives you something to push against and the pan catches your kernels! It lessens the chance of an accident with the knife too.
Betty, I wonder if you've ever heard of the paper towel trick for corn? If you lightly dampen a paper towel and rub it down the ear of corn, all the silk will come off very easily....that way you're not standing there picking them all off individually. It can be a great time saver, especially if you've got a lot of corn to do.
Betty looks good. Here in Texas there is a restaraunt called Babes. Their cream corn is the best thing I have ever eaten in my life. Afterwords you have to say WOW ! It has this tremondous fresh taste as if right off the cobb like yours. Is that the way yours tastes? Is getting it off the cobb the trick ? Store bought does not compare at all. Thanks,
It's the freshness that counts. When I buy corn at the farmer's market, it was picked that morning. If I buy it at the grocery store, i don't know how long ago it has been picked, but the sugar rapidly turns starch, and it no longer has that fresh taste. I usually make corn a lot in the summer when I can buy it fresh, but any other time of the year, it's just not that good where I live! Thanks for bringing up that topic!

If you Google "Lee's corn creamer" and click on the link you will see the product...hope it helps!
