I have started using short grain brown rice for my rolls...works really well. It seems like you use too many ingredients and spices. Isn't sushi supposed to be simple and have very subtle flavors? It does looks delicious though.

We actually met the inventor of California roll - chef Tojo in Vancouver BC. But if you want real veggie sushi, you need to avoid imitation crab meat - it's just all kinds of fish scraps put together, which is not a vegetarian option unless it is some kind of soy substitute.
..It's fish scraps! :O I've been eating it all this time, and I don't eat fish. That's a bummer, haha. Well today I made kimchi, egg, and cucumber roll. Try that, kimchi has anchovies in it though, or "fish sauce" from vietnamese cuisine.
Seaweed is not fish, it's a sea plant like a lettuce. It's packed with nutrients and vitamins, and it is very healthy for you. When you toast the seaweed a little bid in a dry pan, it makes it crunchy and delicious.
Let the pan rest for about 10 minute. If you have a gas stove switch it to minumum heat and switch it off after 5 minutes. Then let it rest another 5 minutes.
Rice cooking: If you have no rice cooker use a (water cooking) pan not a fry pan. Cover the rice with water so that the water stands about 1 inch or a bit more above the rice. Let it cook until the water has completely evaporated (stir frequently). If you use a ceramic or electric stove turn off the power but let the pan on the heating field. Cover the pan tight with aluminium foil. You want to use gloves (heat).

@amafloro - you need a short grain rice, as it is a bit starchier (and therefore stickier) and will not fall apart the way medium or long grain does.

You should try California Rolls if you haven't. A lot of California rolls are made with imitation crab meat, so no worries if you're a vegetarian.

Let it cook until the water has completely evaporated (stir frequently). If you use a ceramic or electric stove turn off the power but let the pan on the heating field. Cover the pan tight with aluminium foil. You want to use gloves (heat).

Very Impressive and informative.Lots and lots of ingredients there ,hemp seed huh...guess you wouldnt be the Hippy Gourmet without it lol..And never seen rolls cut like that before..very nice.

The hemp is for more appetite man like farout. Just roll some up in seaWEED and enjoy. Very strong go gentle on it.

I looked at your video and at first I thought it was just going to be another asshole who didn't know anything. But you really seem to know your stuff and respect the Japanese culture. People like you rule and there should be more chefs like you. I'm not a vegetarian but with your ingredients it made my mouth water.
