@EmilyStory the thermometer is practically useless when making caramel. what u need to look at and acheive is that the sugar starts turning brown. do not stir it. it will trigger the crystallization of the sugar. what u wan is a sauce not rock sugar candy. when it starts turning brown you should lower ur flame because when it gets too brown/dark it will taste bitter.worse,burnt.
