Ok I will have to try this, but I have an important question. A guy, who's name escapes me now, but use to cook Asian food on PBS, says to cook it in a regular pot (Because that is what most people have in US.) on medium-high for 20 min, then 20 on medium-low and then let sit for 20 min. But you first soaked the rice for 1hr and then cooked on low (after boiling) for 12 min and then turn off the stove and let steam for 15 min. Can you do it like that do to the earthen pot or what?
I have been cooking rice like this for a while now and it never looks any thing like yours does and that is the way I want it, light and fluffy and it looks like it sticks... is it due to the pot or the way you cook it or both? leaving it in the water for that long is not good. you are taking out the nutrients inside of it. thats why its white...we only rinse them to clean the grain. i recommand you not to soak them.

@burrdturgler Most likely Short-grained Japonica rice. However, in lack of finding it, I would say any rice would do (as we're not making sticky rice/sushi rice/rice for onigiri). Personal opinion :3

Like the intro in all the videos say, he's the host of the show and is telling you in english how to cook the recipes. It's a cutesy gimmick to make the show more interesting, especially attracts dog/animal lovers. It's a good show too :)
I don't really think myoga tastes like anything else...and it's a really strong taste. I'm really surprised they called it myoga "ginger" here though... I don't think it's anything like ginger at all...
How do you eat this? First the toppings and then the rice? Or everything at the same time. I don't understand how you'd do that with chopsticks (but I use a fork, so that's okay =P)

it actually depends on the type of rice you are buy...because you can cook them on any pot...
the best rice to buy are Jasmin rice...a little expensive buti ts better than spending hundreds on pots that you dont even need :)

Like the intro in all the videos say, he's the host of the show and is telling you in english how to cook the recipes. It's a cutesy gimmick to make the show more interesting, especially attracts dog/animal lovers. It's a good show too :)

Would it be ok to replace the shiso leaves with basil? I'm not quite sure what would be a good substitute for myoga ginger though, any ideas?

shiso leaves = basil + mint
The smell is near ginger though myoga ginger looks like shallot onion

I don't really think myoga tastes like anything else...and it's a really strong taste. I'm really surprised they called it myoga "ginger" here though... I don't think it's anything like ginger at all...

How do you eat this? First the toppings and then the rice? Or everything at the same time. I don't understand how you'd do that with chopsticks (but I use a fork, so that's okay =P)
