To send multiple channels to a bus at the same time...highlight those channels, press and hold 'Shift' + 'option' (mac only, don't know PC). While holding these 2 keys, select what bus you want. This will rout only the highlighted tracks to that specific bus.
For Windows users this can be done with 'Shift' + 'Alt.' It can be a timesaver.
Also, you can use the 'Start' key (aka the 'Windows' key) or probably the 'Control' key on a Mac to assign multiple outputs to a track. To combine with timebomb15's tip, you can use 'Shift' + 'Alt' + 'Start' or probably 'Shift' + 'Option' + 'Control' on a Mac to assign multiple outputs to a selection of tracks.
