@ygfvtliutg7pohydh 5 means that is how many chains it takes to complete each individual stitch. Most people don't end up withe the correct amount anyway but you should be able to get close.

Do not turn means that you are working in a round and you will have a right side of your work and a wrong side. When you make a circle or granny square, you get to the end of it and join. Then you will chain 3 and continue working in the same direction. The words, "Do not turn" just mean that you don't turn your work when you get to the end of the round. I can understand how the words are confusing.
When you crochet an afghan, you chain 3 at the end of your row, turn and then continue back across your afghan.
When you are crocheting in a circle, you chain 3 at the end of the round, then continue on in the same direction, not turning your work.
The afghan will be considered reversible because you turn. A hat will have an right side and wrong side because the stitches are worked in a round and in one direction.
I recently posted a stripe beanie cap. It is a good example of do not turn, although I don't feel it is necessary to use those words. You will not hear them used in the video tutorial. I am going to send you the video link.
