  • I could never keep my hands cold enough to make truffles by hand without them melting. I usually have to form the chocolate centers with a teaspoon and a tablespoon. Works out just fine. my chocolate centers are made out of just semi-sweet chocolate and heavy cream... no butter, cream cheese or any of those other stuff.

  • @rkmugen you could try to put your hands in very cold water (water and ice),

    this make the difference for me.

  • @dawnheros Yes, I actually tried that technique, but even after I towel-up my hands to dry them out, my they warm-up right away..... must be because of my body chemistry. oh well. =\

  • @rkmugen I work with chocolate on a regular basis at work. I ware a couple pair of rubber gloves when I handle chocolate. Leaving finger prints isn't very attractive. The extra gloves help keep the heat in.

  • The chocolates are not tempered correctly, but where is this class.

    The students are learning something new. Tempering chocolate is one of the most difficult things to learn correctly and to try to do this right off the bat is a challenge.

    I like the sugar work. Does anyone know where this class is?

  • Yes chocolate tempering is hard work. Off a few degrees and the cocoa butter seperates and it looks grayish. I've some sucesses at tempering but i'm still learning it. All of the stuff still looked good. I also liked the sugar work.

    becaus all the chocolate in this video are temerated wrong...

    all the chocolate are beamless not silky..

    and how they work tells me that all the peopels dos`nt no what thy do....
