Remember, the whole fish has all kinds of different types of meat on it with varying quality, fat content, flavor, texture, etc., which each bring different prices in a restaurant. What you get in a can of tuna is just chunks of the same part of the fish no matter which can you open. Also, a can of tuna has like 2 ounces of meat in it; a whole tuna can be upwards of 500 lbs, lol.

Surprisingly not at all. Surprising because Tsukuji is the biggest fish market in the world. The Japanese like things clean and they know how to keep their fish markets from smelling nasty. (Been to Tsukuji - lived in Tokyo 31/2 yrs).
