I just realized... they didnt cook anything that was really hard to make. like risotto or beef wellingtons..

i guess marco did center the menu around something that is simple to prepare.

In all fairness, neither Marco's nor Ramsay's menus are particularly difficult to make. The trick is in getting all the timings, steps, ingredients right for multiple dishes at a time while listening for additional orders and getting a bollocking at the same time. Wellingtons are dead easy when you've got all the time in the world to prep them and can cook them at your leisure cos it's just family.
