It's simply just practice when it comes down to getting materials and proportions right, there's many wee touches which help but one of the main mistakes many make is putting too much on, try a little at a time..What patterns are you trying to tye as I could maybe help a bit more....
Great fly i tied a few for a trip i just did in ireland caught 8 wild browns on it so many thanks for the video i also tied this fly in a coachman brown which they liked also.
I bought mine from the Glasgow Angling Centre but if you can see it before you buy it then do this as you will find that it can vary in length and colour. The main thing I look for in the hair is that the black tips on the ends of the hair are short so that when I stack it I get the use of the whole fibre which will allow you to tye smaller flies if needed..

With most of your other flies, you've used Uni thread. With the two most recent videos you've used UTC thread. I'm really interested in when/why you select one versus the other. Thanks for all I've learned from you.
I get asked questions why I don't use UTC thread when tying which I know is very popular with many tyers and myself
especially when tying Buzzers (Midge patterns) but over the years I have used Uni-thread more than UTC that's why you'll see me using it more than the other..
