In my opinion, if you carry, you have already made the decision that you are going to use it.
Once you commit to the attack you cannot hesitate, you will (simply) loose! If he pulls a knife 'mid-flight' then i'll deal with that bridge when I get to it. last year I saved a dude from getting his head stomped and he tried to shank me, dealt with it and made it home, most important thing ;-)

Also, it is not common to come across someone on the street who knows fighting like this, mainly because this fighting requires discipline and someone who initiates the fight must not have alot of discipline.
The only reason they could have for having the knife and NOT using it from the get-go is if YOU started the fight, in which case you don't really have a right to any more combat knowledge.

Knife - Hit them until they can't get back up, but PLEASE, try to avoid causing permanent injuries or death. And call an ambulance for them if they need one.
@Ronnock don't think it does but if u get your hand in his arm u can break his arm disarming him i don't know exactly how it works and i don't know if it's gonna really work well the point is get his arm, turn it in order to break it then get the knife i don't think it works, the same turn can be used to break a leg if he try a kick and in a punch i think u can try evade then move your arm around his arm and use your strength to break it, turning it just like the others but u need to be stronger

Good moves using gross motor movement. Civilians keep in mind that a head stomp while the threat is on the ground will incur charges against you in most situations if you live in the U.S., finish him before he hits the ground or you now become the one who is assaulting the other. For military combat however, whatever gets you through the day. A stomp will work just fine.
Funny you say that. I had a guy grab me from behind once, and after I broke his arm with a hip toss, because he didnt know how to brake fall, and I used the explanation of this to the police officer.
"He grabbed me from behind, and raised my hands and spun around, and get him infront of me and he where I could see to defend his attacks and he tripped on my foot. " Which technically isnt lying since I just described the Motions of a hip toss. I would never say I hip tossed him That let me walk.

Some are actually suprised how much we fire in the Weapons retention training we do. I mean, Im Australian; We are not all about shooting people right away etc. But If an assailant takes your life line he me kill you do get away. Therefore your response is up to you. There is no right or wrong, just a more effective way; depending on the situation and your employment/impacting factors. Again, I agree with senxo just giving you another angle to look from. Cheers
I know this is a really old comment, but if stomping his head will prevent him from standing up and attacking you again, isn't it justified? I would rather face legal consequences than make my family live the rest of their lives without me.
I'm interested in cqc is there any schools that teach this. The closest thing I've found was brazilian jutisu
