street vendors are probably the most skilled. they usually learn from their parents, so the skills are handed down. since they do it for a living, their way is the least wasteful and the most effective.

It's a street vendor. It's not like they have facilities in their cart, eh? :-) With most food, it's best not to worry too much about where it came from. If they don't wash their hands, that won't harm you, but it's the idea that's nasty.
