    He can probably eat very spicy foods. So just adjust it to your tastes. Personally, I'd leave it out completely as even a little inflames my buds.

  • @Australiano75 lol Indian food is usually spicy..so ya if you are an Australian you will need to modify the spices and this holds true for every Indian recipe you will ever see. :) he doesn't miscalculate anything..we Indians just like to eat spicy food!

  • Helpful tip: the powders that Chef refers to which impart a sour taste to the dish are 1) anardana powder (made from ground pomegranate seeds), and 2) amchur powder (sometimes spelled "amchoor"), made from dried, unripened mangoes. Any Indian specialty food store should carry them, or they can be bought online.

  • Thanks for the instructional lesson, chef. Channa Masala is a great dish. Easy to prepare, inexpensive ingredients (as long as you've stocked up on the proper spices), delicious and nutritious. The entire world is rocking to this dish, not just Punjab!!

  • @Ahad55 why don't you learn how to spell as well as pronounce your self before criticising vahchef. it is not aksent, it is accent. Also your telling him not to say, and i quote "plz say pepration not prreprrrration" but even the word you have utilised here is grammatically incorrect and if pronounced the way you have spelt it, then it would orally also be incorrect. The correct word is preparation.

  • @arieloz You can used canned chickpeas, this will reduce the time to cook the dish. Just make sure that they crush as Sanjay says and you should be OK. I basically boil canned chickpeas for about 15 minutes just to soften them a little more. You can also add gram flour to thicken the sauce as well. You can find gram (Besan / chickpea) flour in your local Indian grocery store.

    excellent recipies  in a very transparent and clear methods, but in ur channa masala dish i find the consistency is not too thick, pls give me an idea to make it thick.

  • @madhavisai77 Hi, what I've done in the past is to not add all my chana in one go, but to crush a part of it into a paste and add that separately. However, if your chana is really well cooked and soft, and you didn't add too much water, you shouldn't need to do this.

  • @marge729 you can also use a little Besan (chickpea flour) to thicken the sauce as well.

  • Great video of the Chana masala - I like the tip of the tea bag and soda to keep the color. I use canned peas a lot and they aren't always cooked enough to the consistency you recommend. The next time I make this I think I will still use a can of chick peas but will boil them before mixing in the tomato paste. That way I can save myself the time of soaking and boiling raw peas but still make sure they are cooked to the right consistency.

    BTW.. you can find that green chilie at any grocery stores.

  • You can find green chili's at any grocery. They are small and thin. You can use crushed cayenne pepper as a substitute. Or, if you have an Indian grocery store in your area, they will have all of the right ingredients, check your phone book under Indian / Pakistan grocery. Hope this helps.

  • I made chana masala yesterday and I faced the problem of weird and raw taste. When we fry the paste for say 1/2 hour it becomes bit thick and dry so one needs to add bit of water and it looses all the charm and tastes again like recipe from a cheap hotel.

    I will try the method you suggested. Thanks again

  • Generally in restaurants they grind the onion paste and fry it and keep it for long time. Then boiled chick peas are added with other spices.

    Though the pasted onion gravy really tastes very professional and crisp. But if we add even bit of water to the fried paste is will loose its crispness and would start tasting like a raw onion. Anybody observed this happening ? Please share your experience.

  • I think its better to fry the onions first before you blend them, for some reason it always tastes weird if a make the paste first then fry it. the easiest way is to just fallow vahchefs instructions and take out the whole spices and grind everything before you add the chickpeas.

  • One thing I suggest is to grind the tomatoes and/or the onions, either before or after frying them, for a smoother consistency...
