@Australiano75 lol Indian food is usually spicy..so ya if you are an Australian you will need to modify the spices and this holds true for every Indian recipe you will ever see. :) he doesn't miscalculate anything..we Indians just like to eat spicy food!
Helpful tip: the powders that Chef refers to which impart a sour taste to the dish are 1) anardana powder (made from ground pomegranate seeds), and 2) amchur powder (sometimes spelled "amchoor"), made from dried, unripened mangoes. Any Indian specialty food store should carry them, or they can be bought online.
Thanks for the instructional lesson, chef. Channa Masala is a great dish. Easy to prepare, inexpensive ingredients (as long as you've stocked up on the proper spices), delicious and nutritious. The entire world is rocking to this dish, not just Punjab!!
@Ahad55 why don't you learn how to spell as well as pronounce your self before criticising vahchef. it is not aksent, it is accent. Also your telling him not to say, and i quote "plz say pepration not prreprrrration" but even the word you have utilised here is grammatically incorrect and if pronounced the way you have spelt it, then it would orally also be incorrect. The correct word is preparation.
Anyway thank you VAHCHEF for the upload. Great chef.

Man! I saw this video tonight and really wanted to make chana masala but realized I had to soak the chick peas for at least six hours :( BUT I did make aloo gobi according to your great recipe!! Tomorrow, I'll be making very spicy chana masala!
Thank you for this great recipe! When I go to Indian buffets, chana masala is the first thing I look for. If they don't have it, I feel disappointed.
i hate paki food bnp for life. i dont mind seekh kebabs and shammi kebabs. they are gorgeous. curries are nice when they are hot or madras hot. go well with nan bread and washed down with lager. ooh yeah
@arieloz You can used canned chickpeas, this will reduce the time to cook the dish. Just make sure that they crush as Sanjay says and you should be OK. I basically boil canned chickpeas for about 15 minutes just to soften them a little more. You can also add gram flour to thicken the sauce as well. You can find gram (Besan / chickpea) flour in your local Indian grocery store.
i love ur recipes i even ate ur delicious chana and they were sooooooooo delicious if someone else is show me to cook i can't understand somethings but u r a gr8 chef but i want to make donuts if u have a video on donut then please email me he URL of the video via email my email id is ----- lovely_cherry238@yahoo.com or
The only reason i have any Indian food to eat is because your videos are teaching me how to cook GOOD desi food. God bless you! Thanks and keep 'em coming.
excellent recipies in a very transparent and clear methods, but in ur channa masala dish i find the consistency is not too thick, pls give me an idea to make it thick.
@madhavisai77 Hi, what I've done in the past is to not add all my chana in one go, but to crush a part of it into a paste and add that separately. However, if your chana is really well cooked and soft, and you didn't add too much water, you shouldn't need to do this.
Great video of the Chana masala - I like the tip of the tea bag and soda to keep the color. I use canned peas a lot and they aren't always cooked enough to the consistency you recommend. The next time I make this I think I will still use a can of chick peas but will boil them before mixing in the tomato paste. That way I can save myself the time of soaking and boiling raw peas but still make sure they are cooked to the right consistency.
You are the best. I had some of this last night. Unfortunately, it was a packaged variety. I knew you would have the recipe, so I looked it up and there it was from VahChef :) I will make this homemade now. I just need to find the special ingredients. Thanks!

Thank you Vah chef. you are brilliant. I always watch your videos before making any recipe. You are an asset for people like me who stay far away from India
My freinds are British, they are not eating enough Indian spice food, for them I would request a less spicy recipy, your style of delivery is very good, I follow you on this and would like one to help us loose weight.
This is the first of your videos I have seen...and I was very impressed with the way you explained the whole thing! Keep up the good work and enthusiasm
evrything was perfect..but jst one little suggestion sir! wen u add lemon to the dish wen its on hot flame the taste turns bitter... so better to add lemon wen dished out and ready to eat
@Artlesslb - Explanation Invalid. Incomplete analysis. With all due respect to the chef, whom I admire the most, who stopped him from using his mother tongue? When you post a video to reach out to more people, then you have to take utmost care to keep it error-free. There's nothing "annoying" about what I said.
i use ground/ powdered garam masala toward the end and didn't like it. So, for some time now I haven't used any garam masala. I'll try it with whole spices this time.
Mmmm That looks delicious. I'm gona go to Kingsoopers and buy some of the recipes. (lol) I love how he makes the Puri so nice and puffy. Mine always turns out hard and not so gr8.
BTW.. you can find that green chilie at any grocery stores.
You can find green chili's at any grocery. They are small and thin. You can use crushed cayenne pepper as a substitute. Or, if you have an Indian grocery store in your area, they will have all of the right ingredients, check your phone book under Indian / Pakistan grocery. Hope this helps.
i just want 2 tell u that ur recipes are simply great u make them so easy to understand.i'm young & very new 2 this cooking world,i've cooked alot of your recipes & they comes out complementary.this is just bcoz of u...thank u so much. Now i dont need 2 go anyware and look recipes.I'll stick onto 2 your cooking
This comment has received too many negative votesshow
Your sauce tastes the same. same ingredients for channa rajma chicken. I dont understand. and a small advice. before tasting ur food on video dont say Vaaaaaaaaaaaaaaaah. say it after eating
I made chana masala yesterday and I faced the problem of weird and raw taste. When we fry the paste for say 1/2 hour it becomes bit thick and dry so one needs to add bit of water and it looses all the charm and tastes again like recipe from a cheap hotel.
I will try the method you suggested. Thanks again
Generally in restaurants they grind the onion paste and fry it and keep it for long time. Then boiled chick peas are added with other spices.
Though the pasted onion gravy really tastes very professional and crisp. But if we add even bit of water to the fried paste is will loose its crispness and would start tasting like a raw onion. Anybody observed this happening ? Please share your experience.
I think its better to fry the onions first before you blend them, for some reason it always tastes weird if a make the paste first then fry it. the easiest way is to just fallow vahchefs instructions and take out the whole spices and grind everything before you add the chickpeas.
Damn u r so good!

Can anyone tell me how to get the sauce to thicken? I think I got all the spices right, but it was very watery. Thanks!!!

fry a tea spoon of besan powder along with jeera in the beginning that should give you the restaurant style consistency

@vkrswamy you are annoying
ArtlessIb 2 years ago
@Artlesslb - Can you explain why? I did not provoke anyone. That was just a comment. You got serious attitude issues my friend.
vkrswamy 2 years ago
@vkrswamy I can explain. You were mocking him, whilst he wasn't using his mother tongue.
ArtlessIb 2 years ago
@Artlesslb - Explanation Invalid. Incomplete analysis. With all due respect to the chef, whom I admire the most, who stopped him from using his mother tongue? When you post a video to reach out to more people, then you have to take utmost care to keep it error-free. There's nothing "annoying" about what I said.

i use ground/ powdered garam masala toward the end and didn't like it. So, for some time now I haven't used any garam masala. I'll try it with whole spices this time.

Can anyone let me know if i can make chana with any other beans?
TheMs1derful 2 years ago
I don't see why you could not use any other type of beans as long as you cook them to a consistency that doesn't make them too mushy.

Mmmm That looks delicious. I'm gona go to Kingsoopers and buy some of the recipes. (lol) I love how he makes the Puri so nice and puffy. Mine always turns out hard and not so gr8.
BTW.. you can find that green chilie at any grocery stores.
TheMs1derful 2 years ago
You can find green chili's at any grocery. They are small and thin. You can use crushed cayenne pepper as a substitute. Or, if you have an Indian grocery store in your area, they will have all of the right ingredients, check your phone book under Indian / Pakistan grocery. Hope this helps.

What's wrong with how he is making this? What would you do different?

This receipe is not authentic!!!

Thanks again
ecute13 2 years ago
Generally in restaurants they grind the onion paste and fry it and keep it for long time. Then boiled chick peas are added with other spices.
Though the pasted onion gravy really tastes very professional and crisp. But if we add even bit of water to the fried paste is will loose its crispness and would start tasting like a raw onion. Anybody observed this happening ? Please share your experience.
ecute13 2 years ago
I think its better to fry the onions first before you blend them, for some reason it always tastes weird if a make the paste first then fry it. the easiest way is to just fallow vahchefs instructions and take out the whole spices and grind everything before you add the chickpeas.

thanx for da receipe. its looks really yummy i will cook soon. u r grt man sanjay

One thing I suggest is to grind the tomatoes and/or the onions, either before or after frying them, for a smoother consistency...
jingabobo 2 years ago
I agree.....there should not be chunks of either in Chole.
