@MrAlexerz I found that pausing the video after every step was effective. Annoying, but effective. I've had to do that with pretty much all the instructional origami videos on youtube just because I'm slow anyway, hahaha. After seeing the video 2 or 3 times I usually get it down.

If you hold with both your hands on the root of the wings and pull it out, it'll give the crane a fuller body.

Simple hold with each hand on each wing, with your index finger and thumb, and then pull out, both at the same time. When you do that, the little triangle in between the wings will open into a kind of square. :)
