This works because our brains like patterns. The chords used are easy for our brains to recognize so it finds them pleasant. That doesn't mean, though, that we're limited to liking music with a I,IV,V chord progression. Our brains, when exposed enough to a more difficult pattern (like example C in the video) will eventually learn to recognize, and like the more obscure pattern. Listen to episode 2 from season 2 of Radio Lab at the 25:25 min mark for a better explanation.
