  • Can you correct what I'm doing:

    I fry minced garlic and chopped green onions for a while before I add in the kimchi. After, when it smells like fried kimchi already, I add in some kimchi juice to keep the kimchi moisturized, and then water. I then add gojjujjang to in proportion with the water I added, sprinkle some salt and pepper, and then add in diced pork belly and tofu. I let it boil, and voilà -- kimchi jjigae.

    It doesn't taste exactly like the ones in Korea, but hey, it's somethin.

  • i like SamGyupSal so i prefer to use pork-belly instead.. you know, when i bought the kimchi, sometimes it doesn't even have that much juice.. so if i add water, i guess it will be a bit taste-less,,so what should i put on my kimchi jjigae? should i add gochujang?

  • @TaengooVer9 gochujang is totally fine, you can saute garlic and kimchi to make it more flavorful.

  • @lovelyvangurl yes, you can add water instead..but it will be better if you add the kimchi juice instead since it gives more flavor ^^ when you bought the kimchi, dont throw away the juice..

  • Where does one find 1.5 cups of kimchi juice? When I buy kimchi there is never juice, possibly one tbsp or two per 2 cups of jarred kimchi. Maybe if I buy a big huge jar?

  • @rmjs777 i think you can actually "fake" the kimchi juice by using kimchi sauce and some rice vinegar, it's the same thing. however adding gochujang would be suffice.

    You don't need to add any meat for the Kimchi Jigae and It would taste good as well without the using any meat.

    For the making Kimchi,please use just salt and instead of using the fish sauce.

    is it neccessary to use the pork or any meat in the recipe as i am vegetarian and cant have meat. and also in the kimchi recipe you have showed what can i use instead of the anchovy or the fish sauce.

  • @adelinejojo When you make kimchi, the juices from the cabbage ooze out to mix with all the spices during the fermenting process.

    -If you cook the meat until it's done, and then cook it on medium high heat for another 15 minutes, would it be slightly overcooked? Or would it be just right?

    -How old should the kimchi be to make really good kimchi jigae?

    -How do you get kimchi juice? (do you just drain it from your kimchi?)

  • You can never overcook pork. It's got 8 different kinds of worms in the meat, not even counting the thousands of eggs. Even if you cooked the pork well, it doesn't mean the eggs are dead. You should enjoy how the kimchi tastes before you make soup with it. I've heard of people using older kimchi and just rinsing it off first, I have tried it & was not happy with the results. Yes, you drain the kimchi to get kimchi juice. You can also make kimchi jigae with tuna, instead of pork.

    Yes,you can use beef if youlike and kimchi juice from your kimchi and you can also add some water and Hot pepper paste to taste.
