I then add gojjujjang to in proportion with the water I added, sprinkle some salt and pepper, and then add in diced pork belly and tofu. I let it boil, and voilà -- kimchi jjigae.
It doesn't taste exactly like the ones in Korea, but hey, it's somethin.

You can never overcook pork. It's got 8 different kinds of worms in the meat, not even counting the thousands of eggs. Even if you cooked the pork well, it doesn't mean the eggs are dead. You should enjoy how the kimchi tastes before you make soup with it. I've heard of people using older kimchi and just rinsing it off first, I have tried it & was not happy with the results. Yes, you drain the kimchi to get kimchi juice. You can also make kimchi jigae with tuna, instead of pork.

You don't need to add any meat for the Kimchi Jigae and It would taste good as well without the using any meat.
For the making Kimchi,please use just salt and instead of using the fish sauce.
