@rainbowsalads - the coconuts we get mainstream in the UK are the very mature version of what Dan uses. The water has mostly turned into that tough meat. They're still great to blend up with the coconut water or filtered/spring water into a yummy milk. Watch John Kohler's vids on coconuts. Find a good Asian grocer who might have younger 'Jelly Nuts'!! @Greyfort7, Yes. Our coconuts in the Caribbean come from a big greenish-yellowish husk. And then the fruit inside is a you said a big, brown nut or shell (as we in the Caribbean say).
