Obviously these portraits are Greco-Romans and not physically Egyptians. You can tell by the red and white robes and facial features which is not of Egyptian but of Greco-Romans. I'm a Coptic a native Egyptian. I know how my ancestors looked and we did not look like this.

They died so young because at their time the life expectations was very limited. They date to the Roman period, from the late 1st century BC to the middle of the second century AD. They were neither Christians nor Jews. During the Roman rule of Egypt, much of the population of Faiyum was made-up of either Hellenized Egyptians or people of mixed Egyptian-Greek origins, cultures and religion.

Perhaps they didn't all die so young but they had their portraits painted in the primes of their lives because of the Ancient Egyptian belief that the depiction of the body accompanies one into the afterlife so obviously they would want the younger versions of their bodies.

They did not necessarily die very young... The portraits were painted during their life-time, exhibited on the wall of the reception room and LATER, fixed on their mummy.
You can have an eighty year-old body adorned with a forty-year old portrait...
