you should try to cook it the beijing style!! boil it for a short time, then hang them up to dry... then coat them with maltose syrup and then hang them up in ovens and leave them in there for 24 hours XD ... that will make them all shiny brown and the skin will be crispy and VERY delicious... if you want to taste the peking duck before cooking it so you have an idea.. go to any chinese restaurant that has an elaborated dinner menu.
On average, how old are the ducks you process? Are they Pekin or Jumbo Pekin?
