There is no need to do this to a tomato. The seeds and surrounding juices carry most of the tomato flavor and the skin is not that tough. Not to mention that a good portion of the cancer fighting lycopene is stored in these parts as well.

mise en place means ...putting in place. basically it means to be fully prepared for your recipe.

Informative video indeed (thanks) but I wondered the same thing - the juice of the tomato is gone along with the seeds. :(
Is there no way to strain them? I suppose I should have one of those mini-strainers before I ask that question.
