Even after death the deer's muscles are full of the chemicals that make them move. Ca+, Na+, etc. It is common for enough of those chemicals to get together and cause muscle movement. I've worked in the health care industry my whole life, most recently in the ICU, and when humans die their muscles also twitch. Just biochemistry. Love me some deer jerky!
