AB has taught me a lot of great things, but his suggestion that one should use a heating pad to melt chocolate (like in the truffle episode) never worked for me. A metal bowl over a saucepan works much better. (a double boiler is out. . . it's a unitasker!)
double boilers are risky in candy making because of the chance of water vapor getting into the bowl and making crystals, but double boilers are also useful for fondue and other melting things. though you dont have to buy a professional one, you can use one pot with the water, and just a bowl on top of that. not sure what episode he shows it :D good luck.
Probably, if you watch the "House of the Rising Bun" episode at the end they show bloopers of his last creation sticking in the pan when he tried to get them out, haha.
Man oh man that looks good. I am a big mallow fan and im gonna have to try this out. I can already tell im gonna get every inch of the kitchen dirty when i do but seems like it would be worth it. The idea of a homemade moonpie seems like heaven on earth to me.

My guess? The folks at FNHQ recommended he go all Viking, since Food Network and Viking seem to have a bit of a partnership. Which isn't a bad think, Viking appliances are super-high-end...but it did mean the sad retirement of the sweet flame-painted Kitchenaid.
