It's sub as in "subtitles". Dubbing is when you put a new voice in whatever language you understand over the voice the anime originally played as. For example: naruto and bleach in America are dubbed over in English, but when you watch the original episodes, they're in Japanese with English( or whatever language you speak) subtitles..
