People... the rice wine he is talking about is NOT sake. It's chinese and there are many, many varieties. You might see it labelled "cooking wine" or "cooking liquor". The proper substitution if you can't find it, and it will be in every town in the world, so keep looking, would be dry sherry, not sake.
I went to four stores today (two of which are a plethora of Asian foods sections, and found no Rice Wine. I found Rice Vinegar, Rice Wine Vinegar, but no Rice Wine. I am convinced Alton is fooling us all.

@reallyocean if your grocery store doesn't sell alcohol, you'll have to go to a liquor store or wine and beer shop...if your store does sell alcohol, it's probably going to be with the rest of the wines and not in the Asian food section. If you still can't find Chinese rice wine, you can use a pale dry Sherry as a substitute or even Gin...if all else fails, you can use Sake, though it's not really anything like Chinese rice wine...Good Luck!

I did peek at the wine section in the last store and found some Sake but ultimately decided I would just go with the Rice Wine Vinegar. I have no idea whether or not this was a disasterous decision but the dish has turned out great three times so far.
@reallyocean Normally substituting vinegar for wine would have rather disastrous results as they really have major flavor differences. Rice Wine vinegar doesn't have a very harsh acidic taste though and mixes well with other flavors without overpowering them so that's probably why this worked out. Give the Sake a try sometime, just for the sake of experimenting. I wouldn't start substituting Red Wine Vinegar for Red Wine in other recipes though lol...Glad it worked out for ya!

Here in MN grocery stores are not allowed to sell over 3.2 alcoholic beverages so you may need to shop off side depending on your states laws. Always try to shop at a Asian market. You can often find these in the lower east sides of and capitols downtown (don't ask me why but this has been the case in most capitol/large metro areas I have traveled in the States)
