    --Betty :)

  • Dear Betty, I did as you suggested and read the instructions

and rewatched the video-there is still no mention of covering

the potatoes completely or loosely while baking? My apologies

for digressing this point. Your congeniality is comforting

and appreciated. It shows how you serve every meal with love.

    Thank you again, peace, Angela

  • @angela2760 Hi Angela! I must not have gone into detail about the aluminum foil. I do cover the potatoes with it while they bake, but take it off when they are nearly done to brown off the top.

    --Betty :)

  • Dear Betty, When you put the potatoes in the oven, do

you cover them? Thank you, angela

  • @angela2760 Hi Angela! Yes, I cover them with aluminum foil. You will always see the complete recipe with each of my videos. Just click the down arrow or "more info."

    --Betty :)

many thanks for posting these fantastic recipes, i can't wait to watch more and get cooking. you have earned another subscriber

Betty, I love you! You have great videos, so helpful in my new life as a wife!

  • im with TOMFLONG whats with your pronunciation? americas have a terrible habit of calling HERBS ERRBS. VERY NICE VIDEO THOUGH.

  • I have the same salt!!!!! Haha, if you ever had a resterant, i would just love to come :) Great Job!!

  • Hey Betty. Nice video on those baked potato fans...I've got 'em cooking right now, thanks for the idea.

  • YAMMIIIII!!!!

  • UURBS!...HERBS....H! .....NICE RECIPE THOU!

  • It looks tasty

  • it looks so good :D

  • I love your tip about cutting them with the wooden spoon makes it so much easier and looks better. and the cheese crust looks so yummy with the herby butter. we call these hasselback potatoes in australia and uk.

  • I just did and its amazing!!!! btw I left the skin, after baking the skin is really tasty! and the crispy cheese on the top is just something more! =)

    nice video and recipe!

  • Thanks for the recipe. Looks very good!

  • I think I'm in love.

  • yea the skin is good but i think for this recipe peeling the patatoes is the best approach

  • wow u do a really nice job of explaining things and ur pretty and i love ur blu shirt lol tahns for the recp.

  • @munecagirl22 No, it will be fine to leave the skin on. I think it looks a little more elegant without the skin, so it depends on how you plan to use it. It is great with the skin on and has more nutrition.

    --Betty :)

  • yummyyyy..

  • @saarahkhan Thanks!

    \--Betty :)

  • Does it make a difference if the potato is skinned? Taste, cooking time etc?

  • Looks delicious, can't wait to try it :)

  • @mademoisellechoko I hope you had an opportunity to try the baked potato fans! Thanks for your nice comment!

    --Betty :)

  • I love my potatoes and Im going to try this. Looks yummy!

  • I think you will love these! Thanks for your wonderful comment!

    --Betty :)

  • I simply adore your channel! I've tried your pecan pie and now I really want to try these tonight! Unfortunately I only have white potatoes... They're about half the size of the baking potatoes you used... Would they work and would you adjust oven temp/baking time?

  • I'm sorry I wasn't able to get back to your before your dinner last night. With potatoes about half the size of baking potatoes, yes, I would lower the temperature to about 350 to 375 degrees. Then I would check them for doneness occasionally, by using a fork (for this recipe). But, the smaller potatoes would be great! Thanks for asking!

    --Betty :)

  • wow thats so creative and awesome looking! xDD

  • Thanks!

    --Betty :)

  • Thank u for the recipe! I come from Italy, and I appreciate so much potatoes cooked in every way. Moreover, I live in the land where pecorino is produced;)

  • Thanks for your lovely comment! You are welcome for the recipe!

    --Betty :)

  • betty i'm sure we would all like to see your herb garden. i'm very intrested in gardening and was delighted to see you using your own produce in your receips. do you have any winter vegetables growing?

    --Betty :)

  • How long should I soak the potatoes?

I love all your recipes keep up the good work .

  • They don't *need* to be soaked at all; however, if you let them sit at room temperature, they will turn brown. Since I needed to spend some time for preparing the other items, I just let them sit in water until I was ready for using them.

    --Betty :)

  • ok ok ill have to admit.. those are some sexy potatoes !!

  • I'm glad you like sexy potatoes!

    --Betty :)

  • why are they soaked in water!?

  • If you let them sit at room temperature, they will turn brown. I was just busy doing other things, so I put them in water only until I was ready to use them.

    --Betty :)

  • Thnx Betty.

  • You are very welcome!

    --Betty :)

  • OUTSTANDING! But Betty you should really use sea salt instead of the iodine stuff (healthier). But hey, that's the beauty of your recipes.. it's ingredients ppl usually have in their home already. Besides, in 10 years they'll be telling us the iodine is actually good for us again lol oh well, great recipe!

  • I love sea salt! That would be good on these! Thanks for the tip!

    --Betty :)

  • thanks Betty i cooked you're recipe it was amazing !

    ;-)

  • Thanks for your lovely comment and for your great feedback! I really appreciate it!

    --Betty :)

  • Oh! That is gorgeous and I am thinking of allowing my boys to make this tomorrow in their cookery lesson.

Have to say, I just LOVE the idea of using the spoon to stop the knife going right through, I would never have thought of that and it makes it a lot safer!!

    THANKYOU!!

Love and hugs to you both xx

  • Hi Linda!

This would be great for a cooking lesson! It takes some precision, and it looks and tastes so nice when it's done! Thanks for your comment!

    (hugs)

    --Betty :)

    --Betty :)

  • great idea thanks for this recipe !

  • You are very welcome! I hope you enjoy the potato fans!

    --Betty :)

  • Thanks for the topping idea, you are welcome for the well deserved complements.

  • Hurb vs herb... cute...

While watching this video, I was inspired by another favorite Chef I watch Bryan Knox and how good his Jamaican Jerk rub is on sweet potatoes. I was wondering if you think doing a sweet potato fan with Jamaican rub would work similar? If so would you still top it with two cheeses?

Thanks for the entertaining video's that you make! You are my Fav Chef outside of the BBQ arena and my Fav Lady Chef, making you a double favorite! Happy Thanksgiving!

  • Thanks for your lovely comment! I think a sweet potato fan with Jamaican rub would be wonderful. I don't think cheese goes well with sweet potatoes, so I would leave it at that, or maybe try a topping with brown sugar and pineapple. Thanks for your lovely compliments on my cooking!

    --betty :)

  • Looks like a great side dish! Too late for our Thanksgiving though just in time for Christmas dinner. I am also very envious of you and your herbs!!! The last time I was able to harvest was the first week in September. I am indeed quite north of you..all the way up in The Great White North.....Canada of course....Enjoy them while they last! Thanks again for your great tutorials!!!!

  • I hope you enjoy the recipe! Yes, I still have fresh herbs. We are expecting a hint of snow this weekend, so that may take care of them. :(

    --Betty :)

  • I just about cried when i saw your recipes. My 7 yr old is allergic to peas, corn, nuts, wheat, soy, and eggs. I'm so glad that you have some recipes that she can eat. She watches your videos with me. Thank you!!! Can you make sweet potatoes with marshmallows??? Please?

  • I am glad that I have some recipes that your daughter can use. I won't be able to make sweet potatoes with marshmallows before Thanksgiving--possibly before Christmas! Thanks for your comment!

    --Betty :)

  • Oh wow, these look so yummy! I also wanted to say that I am going to attempt your pecan pie recipe for Thanksgiving! I am super excited to make it!!

  • Thanks for the compliment! I am glad you are going to try the pecan pie--it's delicious! You need to protect the crust and top from getting too brown, but otherwise, it is very easy, and so, so good! Good luck with it, and Happy Thanksgiving!

    --Betty :)

  • Also wanted to say, that I use pecorino romano all the time, even in place of parmesan. Its usually cheaper and has a similar flavor!

  • I started using it just recently--love it!

    --Betty :)

  • Great recipe Betty:) The spoon idea makes sure you don't screw up, nice tip! I would use unsalted butter and adjust the seasoning with kosher salt. You STILL have garden herbs!?? Lucky you:) Thanks.. and this is another one I will do!

  • Oh, I'm glad you like the recipe! Yes, you can use unsalted butter and adjust the seasoning with kosher salt. I *do* still have herbs growing! Thanks for your lovely comment!

    --Betty :)

  • Yes, it does add some interest--and some flavor! Thanks for your nice comment!

    --betty :)

  • Thanks for your lovely comment! I hope you enjoy the recipe!

    --Betty :)

  • this looks wonderful, so simple to make and so pretty too! I love your videos!

  • Thanks! Yes, it is really simple, but it is impressive beside a nice entree! Thanks for your sweet comment!

    --Betty :)

  • What a great idea. You could go crazy coming up with different combinations of seasonings and spices or cheeses, couldn't you? Very nice idea for the winter to go with any sort of roasted meat or fish.

  • Yes, you could have a different-tasting potato each time, just by changing the herbs and cheeses! It looks really pretty, too! Thanks for your lovely comment, Patsy!

    --Betty :)

  • that looks amazingly yummy!!!

  • I think you will enjoy it! Thanks for viewing and commenting!

    --Betty :)

  • Wow, the potateos looks delicious and appealing. Thanks again Betty for sharing.

  • You are very welcome! Yes, these potatoes look a little fancy, and they taste wonderful! Thanks for your sweet comment!

    --Betty :)

  • Made something like this a while ago, and it tasted really great! We had smaller potato's so they opened a bit easier. Also while cutting we put them in a spoon, just like you put the handle of a spoon next to it, so they wouldn't be cut all the way through.

We didn't put herbs on top of it, so next time I will try your version out!

  • I'm glad we're thinking along the same lines! I think you will like the herbs, but it is good without them, too! Thanks for your nice comment!

    --Betty :)

  • looks great...and pretty presentation

  • Thanks very much! I appreciate your comment!

    --Betty :)

  • Great recipe, I look forward to trying this. Thanks for sharing!

    --Betty :)

  • Betty you're so pretty :)

  • Thanks for the compliment!

    --Betty :)

  • That looks so good and pretty too! Really easy for a beginner cook like me (although your other recipes aren't hard either, look forward to trying the potato yeast rolls). I'd tr this with chives or dried dill. Thanks!

  • Chives and dill are a good combination for these potatoes. They will look lovely and taste great! Thanks for your sweet comment!

    --Betty :)

  • I'm not a big fan of baked potatos but I must say these looked wonderful will be trying these for sure.

  • I'm glad to win you over! I think you will like the potatoes this way! Thanks for your comment!

    --Betty :)

    --Betty :)

    --Betty :)

  • Baked potatoes are usually so blah, but these look way tastier!

  • Yes, this will make them tastier--and they look more appetizing! Thanks for viewing and commenting!

    --Betty :)

  • Super recipe Betty ! We call them "Hasselback" potatoes. They work great wrapped in foil & cooked on the bbq in summer....top rack, turn often. If you have time to presoak them for an hour or more in ice water....the slits open wide during baking time & look very pretty. Your fresh herbs are wonderful. I am planting some in pots right now to place in my south facing window to hopefully get some fresh herbs over the winter time. Great inspiration to us "Foodies" Betty ! Outstanding !

  • Your barbecue idea sounds wonderful! Also, that is a great tip, putting them in ice water to open the fans--I've done that to make radish roses, but I didn't even think about it for these potatoes! Great tip! Good luck with your herbs over the winter!

    --Betty :)
