@quantumcahill its not "disorder" or "chaos". the laminar flow means the layers slide over each other and do not mix. they are just shifted. when he turns the crank one direction, some layers of fluid (its not water) move faster and hence further than others. there are so many layers it looks mixed. but when it is reversed, they move the same distance in the opposite direction, and the fluid returns to its original state. so the layers were ordered the whole time!
