How acidic is the product if only left to ferment the minimum amount of time? Acidic enough to be harmful to tooth enamel as with lemonade? I can always drink it with a straw, but this still concerns me if I'm going to be drinking it regularly.
Have you noticed any or rather, did you notice any changes when you started drinking Keifer? I've yet to try it. I do eat lots of other probiotic foods but haven't found any grains my way yet.

And finally, what kind of lid is that you used at the end? Where can one purchase that?
@dannybex The strainer has plastic mesh. I am not particularly concerned about anything from the plastic having leached into the bottled spring water as it has not affected the kefir. It seemed to me that the kefir culture did best with spring water (with natural minerals) than with bottled water. I think home filtered water might be just fine, but results might vary depending on what the filter eliminates and what beneficial mineral content remains. Chlorine kills the kefir grains.
@dannybex The lid was just the same plastic lid that the glass jar came with, except we poked some holes in it. I bought the jar at a supermarket in Mexico.

@goddessgia She is pronouncing it correctly except the spelling is incorrect. It is supposed to be spelled Kiefer named after Kiefer Sutherland who first popularized it. His father Donald Sutherland invented it but no one would ever want to call it "donald". That would be ridiculous.
@rpravak I sympathize with your crusade to stamp out incorrect pronunciation since mispronunciation affects me somewhat like fingernails on a blackboard do to most people. I was unaware of another pronunciation and was only repeating the pronunciation I had heard from English speaking friends, from other videos and a website. Thank you for your correction :)
can any one tell me if water kefir is the same as milk kefir, i have milk kefir, and i am new with the grains , they look like califlower and i have rinsed them under regular tap water, and put them in coconut water only, today i hope i did not kill them

Great video, thank you. I've been making water kefir, but I just drain them I don't rinse them. Why do you rinse them? That sugar looks beautiful, wish I could get some here in New Zealand. I have been using rapadura instead.
@moped1984 - I've used a glass container nearly all the time, and only used plastic ones when giving tibicos away, along with the suggestion that they use a glass container at home. When I mentioned using plastic, I meant for utensils, and to not use metal, which I had heard could cause them problems - particularly silver, since it has antibiotic properties that could kill the tibi bacteria..
@Hamish121212 - I meant to say just don't use metal. I use plastic utensils, a plastic strainer and a glass jar or pitcher for them and so far so good!
it may slow down a little bit the process, but I think after about 4 days there is nearly no sugar, but less sugar leads to more alcohol , I had some tests with combucha and water kefir and i got in die end about 4 vol % alcohol like in a ordinary german beer in both of them, but the taste suffers a lot in my opinion
@canefan17 - I don't know if tibicos consume fat. I am not sure how long it takes them to consume the sugar, which probably depends on how much sugar you add. The longer they are left, the stronger the drink. The amount shown in the video with one chunk of piloncillo sugar produces a drink that tastes good to me in 24 hours, and at 48 hours it is much stronger, not as pleasant to me but a beer drinker (which I am not) would probably like it.
help!!! my kefir grains keep dying .. I use 1qt glass jar ,3 tablespoons of organic sugar, and half of organic lemon. it lasts two months and they die all the time..why??
@Sirhansome - I haven't heard about adding lemon to balance the pH of the water ... so far, no matter whether I use spring water (bought when I'm in the US) or bottled water (bought in Mexico) the grains multiply steadily - sometimes too much! I do notice that they multiply faster in the tropical climate where I am in Mexico. I have no idea what the pH of the water is in either place.
@MoniqueElizabeth0971 - room temperature is best, as long as that is above 65 degrees. Below that they tend to slow down and can go dormant in the fridge.
@Samasnier YES! you are correct. Yet, I have found some people claiming to have converted milk kefir into water kefir.
Although my previous comment was over 2 months ago, I just got the nerve to try it myself & am currently experimenting with the water-to-milk kefir conversion.
The grains SEEM to be growing and developing the same "appearance" as milk kefir grains I have seen on videos.
4 successful days of delicious kefir yogurt & my kefir cheese will be ready tomorrow.
@Samasnier FYI, my attempt to convert the water kefir to milk has failed> After a week the kefir grains were reduced in size/number so I aborted the test.
@Sirhansome@gekowet water kefir and milk kefir are two different things completely and they each have different grains which are NOT interchangeable. Milk kefir grains have evolved to ferment mammal milk, whether cow, goat or sheep. Water kefir grains should not be used to ferment milk, they have evolved to ferment water-based liquids that contain sugar such as water with sugar (as in this video), fruit juice and coconut water.

@zjuliann - just as ke6gwf says here, the brown votive shaped thing I put into the container is mexican piloncillo sugar, though in some places it is also labeled as panocha (though that word will provoke a lot of snickers here since it is slang for female genitals also)
to remove sugar cane chaff that might be left from the raw piloncillo sugar (some brands have more than others) and to give the new batch a fresh start :) Also, if you are adding fruits or fruit nectars, to make sure there is no old bits of fiber there from them. I don't know for sure that it is essential each time, but my grains thrive and multiply well with this routine.

At what temperature does water kefir grains die? I recieved dydrated ones two days ago and put them in sugar water(with lemon slices) and they're still not moving. I did one mistake tho. I think the water might have been too warm. It was between hot and luke warm, perhaps 50 degrees Celsius(don't know haw much that is in Fahrenheit?) is a wild guess...
I am not sure at what temperature they die, but would not recommend using water that is warmer than the normal temperature of the human body - 37° degrees celsius or 98.6° F.) I've never used water at anything other than normal room temperature of my home which varies between 20°C/70°F - 28°C/82°F and the grains thrive.
50deg c = 122 F... you using that hot of water on your grains?... I would just buy spring water from the store and use it at room temp. Also,, IMO.. water grains take a while to Really get going.. doesnt mean they're not working if they are not moving.. just means they are not putting off as much gas.. thus the bounce up and down.. Dont be so concerned w/ them moving.. imo.. also i would use Turbinado sugar ( sugar in the raw).. seems to work best for me.. and Dried Organic Apricots.
@HampusTheCow - I have always used bottled water (either spring water or regular bottled water) that is at room temperature. I've never used lemon slices. It is possible that the hot water affected them :( It is possible that they are okay, just need more time to come back to life. I hope they are better now!
@HampusTheCow I use citrus most of the time - organic so as not to introduce anything that would hurt the kefir. I've use lemons, limes and pink grapefruit. 50C is 122f (if my math is right) and 122f is hot enough to hurt the kefir.
Did you toss them and start over? Or did you give them some long-term care?
I've never grown milk kefir cultures, so I honestly don't really know whether one is easier or not. They do have the same health benefits, though some sources say that water kefir is better for those who are lactose intolerant.
i read articles on kefir, it says lactose intolerant people can drink it, since the bacteria actually eat away all the milk sugar (lactose) from the milk, it also breaks down the proteins, fats, vitamins and minerals, making the kefir highly bio-available. Although i guess you would have to let it cultivate longer for the process to happen.
But never tried water kefir before and want to get some, it looks really good and a lot less messier than milk kefir
It is much better to use glass which does not react with the culture. Some plastics are probably okay to use briefly, though I'm not really sure about storing them in them since plastics can give off chemicals.
Thank you for sharing your video, this is actually a great video and information about water Kefir you are providing us all. About what to use or not, as long as you don't destroy or contaminate them it's all good. Natural ingredients do work best. Common sense in using good hygiene while going through the production process will show in the growth of healthy kefir.

Hi Becky, You have to get water kefir crystals from someone who is giving some away. Healthy grains multiply quickly and soon you have enough to give some away. The beverage they produce is as healthy as milk kefir, and helpful for the lactose intolerant. Honey has natural antibiotics which can kill or inhibit the kefir culture. Piloncillo contains essential minerals. Milk kefir can be adapted to water, though it takes a long time before it begins to thrive in water. All the best to you!
The color of the drink/water depends on the color of piloncillo you use. The grains are actually a bacterial culture which eats sugar and excretes a small amount of alcohol and carbon dioxide which creates a lightly (1%) alcoholic, carbonated drink which tastes a bit like beer or the mexican drink "tepache."
I wonder if i can convert my milk kefir grains into water kefir grains? I was using them to make kefir for my dogs, as I dont want milk kefir, but if i can convert them, I would then use the kefir water. Any ideas?

Any sugar could possibly be used, but one that is as unrefined as possible is always better - it contains trace minerals that are beneficial to the growth and health of the culture. I use mexican piloncillo cane sugar, (also called panocha) which is medium to dark brown in color, comes in a cone shape and is what the person who gave them to me was feeding it. It can generally be found in the mexican food section of your grocery store.. I would never recommend using white refined sugar.
@tono80 I've used panela, it looks a bit different than the sugar used in the video (not as brown). I believe they are different types of sugar, but both would work well. Rapadura, raw cane sugar works well also.
I would not use my hands to stir the Kefir. I'd think using clean technique would decrease the chance of a unwanted bacteria or yeasts getting in your brew. Nice video otherwise.

of course - silver is used to purify (sterilize) water, which means it kills bacteria. When people use metal, they don't really know for sure what alloys are used - copper, zinc, iron, tin, etc. and each does react with water and acidic or carbonated liquids to one degree or another and can affect the grains. Definitely best to just use glass (most hygienic) and plastic.
Thanks for the video, I have been making kefir for a while now but can't get it to multiply. After watching your video, I realise that maybe the juice I add to it is not sweet enough. I did not get on with the milk kefir at all as I did not like the taste and the juice kefir gets alcoholic pretty quick if I leave it out. Not easy to get it right but I will persevere!
I'm allergic to milk, nuts and cocunut amongs other things so kefir is good allround for my digestion. Unfortunately, I can't get it right and it either is too strong or too weak. Maybe due to the weather changing from 10C to 30C in a day lately!
I saw on web search that some kefir growers use thermal bags or heating pads for fermenting but I think the water kefir grains need to breath. Are you allergic to seeds? I think there are recipes for sesame seed & sunflower seed milks, sesame seeds contain a lot of calcium, 100 grams of sesame seed has enough calcium for the daily reccomend dose.

I think with milk kefir grains, it gets bubbley, and with water kefir grains I think it becomes a darker color and I read if your put your ear next to the glass, it will sound kinda like breathing, but am not sure if it the same with water kefir grains :)
You see, I have milk kefir, but I've noticed since reintroducing dairy into my diet after having avoided it for about a month, I'm having some reactions to it, mucous and stuff. If I had some water kefir grains, I could still get the probiotic drink without the milk component and just use my milk kefir in my recipes.

I got them in México from a friend who was given them by a naturist doctor in Guadalajara...they should not be sold, but are shared by people who have them which is both a humanitarian effort as well as a practical necessity - they multiply if you are taking care of them properly and you end up with more than you need. When we have enough to give away, we post a local ad for people who live close enough to us to come get them. We do not ship them. I'd ask a naturopath doctor in your area.

Nunca hemos agregado limón, pero manzana si, y produjo una bebida sabrosa pero normalmente no agregamos nada mas que el piloncillo. No es esencial agregrar un limón o otra fruta, a menos que quieres una bebida con ese sabor.

from either the Arabic "keyf" (joy/pleasure) or the Turkic "köpür" ((milk). And it is indeed pronounced kuh-feer.

how long can I let it ferment if I want it to consume almost ALL the sugar.
Also... does it consume the fat in coconut milk?

it may slow down a little bit the process, but I think after about 4 days there is nearly no sugar, but less sugar leads to more alcohol , I had some tests with combucha and water kefir and i got in die end about 4 vol % alcohol like in a ordinary german beer in both of them, but the taste suffers a lot in my opinion

@canefan17 - I don't know if tibicos consume fat. I am not sure how long it takes them to consume the sugar, which probably depends on how much sugar you add. The longer they are left, the stronger the drink. The amount shown in the video with one chunk of piloncillo sugar produces a drink that tastes good to me in 24 hours, and at 48 hours it is much stronger, not as pleasant to me but a beer drinker (which I am not) would probably like it.

help!!! my kefir grains keep dying .. I use 1qt glass jar ,3 tablespoons of organic sugar, and half of organic lemon. it lasts two months and they die all the time..why??

You omit adding a 'slice of organic lemon' as others recommend to 'balance' the ph in the water (although I thought it peculiar).
Yet, your kefir grains seem to thrive.
Is your water very alkaline?

@Sirhansome - I haven't heard about adding lemon to balance the pH of the water ... so far, no matter whether I use spring water (bought when I'm in the US) or bottled water (bought in Mexico) the grains multiply steadily - sometimes too much! I do notice that they multiply faster in the tropical climate where I am in Mexico. I have no idea what the pH of the water is in either place.

@MoniqueElizabeth0971 - room temperature is best, as long as that is above 65 degrees. Below that they tend to slow down and can go dormant in the fridge.

@gekowet My understand is that kifer can be used for either water or (raw) milk.
Simply provide the kifer grains with enough food (sugar in water, or milk) & they will thrive.

@Samasnier YES! you are correct. Yet, I have found some people claiming to have converted milk kefir into water kefir.
Although my previous comment was over 2 months ago, I just got the nerve to try it myself & am currently experimenting with the water-to-milk kefir conversion.
The grains SEEM to be growing and developing the same "appearance" as milk kefir grains I have seen on videos.
4 successful days of delicious kefir yogurt & my kefir cheese will be ready tomorrow.

@Sirhansome @gekowet water kefir and milk kefir are two different things completely and they each have different grains which are NOT interchangeable. Milk kefir grains have evolved to ferment mammal milk, whether cow, goat or sheep. Water kefir grains should not be used to ferment milk, they have evolved to ferment water-based liquids that contain sugar such as water with sugar (as in this video), fruit juice and coconut water.

That was "raw piloncillo sugar", Mexican Brown Sugar.
You can find it at Mexican markets, or use brown sugar or evaporated cane juice etc.

@zjuliann - just as ke6gwf says here, the brown votive shaped thing I put into the container is mexican piloncillo sugar, though in some places it is also labeled as panocha (though that word will provoke a lot of snickers here since it is slang for female genitals also)

to remove sugar cane chaff that might be left from the raw piloncillo sugar (some brands have more than others) and to give the new batch a fresh start :) Also, if you are adding fruits or fruit nectars, to make sure there is no old bits of fiber there from them. I don't know for sure that it is essential each time, but my grains thrive and multiply well with this routine.

At what temperature does water kefir grains die? I recieved dydrated ones two days ago and put them in sugar water(with lemon slices) and they're still not moving. I did one mistake tho. I think the water might have been too warm. It was between hot and luke warm, perhaps 50 degrees Celsius(don't know haw much that is in Fahrenheit?) is a wild guess...

I am not sure at what temperature they die, but would not recommend using water that is warmer than the normal temperature of the human body - 37° degrees celsius or 98.6° F.) I've never used water at anything other than normal room temperature of my home which varies between 20°C/70°F - 28°C/82°F and the grains thrive.

50deg c = 122 F... you using that hot of water on your grains?... I would just buy spring water from the store and use it at room temp. Also,, IMO.. water grains take a while to Really get going.. doesnt mean they're not working if they are not moving.. just means they are not putting off as much gas.. thus the bounce up and down.. Dont be so concerned w/ them moving.. imo.. also i would use Turbinado sugar ( sugar in the raw).. seems to work best for me.. and Dried Organic Apricots.

@HampusTheCow - I have always used bottled water (either spring water or regular bottled water) that is at room temperature. I've never used lemon slices. It is possible that the hot water affected them :( It is possible that they are okay, just need more time to come back to life. I hope they are better now!

@HampusTheCow I use citrus most of the time - organic so as not to introduce anything that would hurt the kefir. I've use lemons, limes and pink grapefruit. 50C is 122f (if my math is right) and 122f is hot enough to hurt the kefir.
Did you toss them and start over? Or did you give them some long-term care?

I've never grown milk kefir cultures, so I honestly don't really know whether one is easier or not. They do have the same health benefits, though some sources say that water kefir is better for those who are lactose intolerant.

i read articles on kefir, it says lactose intolerant people can drink it, since the bacteria actually eat away all the milk sugar (lactose) from the milk, it also breaks down the proteins, fats, vitamins and minerals, making the kefir highly bio-available. Although i guess you would have to let it cultivate longer for the process to happen.
But never tried water kefir before and want to get some, it looks really good and a lot less messier than milk kefir

It is much better to use glass which does not react with the culture. Some plastics are probably okay to use briefly, though I'm not really sure about storing them in them since plastics can give off chemicals.

Thank you for sharing your video, this is actually a great video and information about water Kefir you are providing us all. About what to use or not, as long as you don't destroy or contaminate them it's all good. Natural ingredients do work best. Common sense in using good hygiene while going through the production process will show in the growth of healthy kefir.

Hi Becky, You have to get water kefir crystals from someone who is giving some away. Healthy grains multiply quickly and soon you have enough to give some away. The beverage they produce is as healthy as milk kefir, and helpful for the lactose intolerant. Honey has natural antibiotics which can kill or inhibit the kefir culture. Piloncillo contains essential minerals. Milk kefir can be adapted to water, though it takes a long time before it begins to thrive in water. All the best to you!

The color of the drink/water depends on the color of piloncillo you use. The grains are actually a bacterial culture which eats sugar and excretes a small amount of alcohol and carbon dioxide which creates a lightly (1%) alcoholic, carbonated drink which tastes a bit like beer or the mexican drink "tepache."

I wonder if i can convert my milk kefir grains into water kefir grains? I was using them to make kefir for my dogs, as I dont want milk kefir, but if i can convert them, I would then use the kefir water. Any ideas?

Any sugar could possibly be used, but one that is as unrefined as possible is always better - it contains trace minerals that are beneficial to the growth and health of the culture. I use mexican piloncillo cane sugar, (also called panocha) which is medium to dark brown in color, comes in a cone shape and is what the person who gave them to me was feeding it. It can generally be found in the mexican food section of your grocery store.. I would never recommend using white refined sugar.

@tono80 I've used panela, it looks a bit different than the sugar used in the video (not as brown). I believe they are different types of sugar, but both would work well. Rapadura, raw cane sugar works well also.

I would not use my hands to stir the Kefir. I'd think using clean technique would decrease the chance of a unwanted bacteria or yeasts getting in your brew. Nice video otherwise.

I've read that silver inhibits the fermentation of the yeast, they some people just do away with metal.

of course - silver is used to purify (sterilize) water, which means it kills bacteria. When people use metal, they don't really know for sure what alloys are used - copper, zinc, iron, tin, etc. and each does react with water and acidic or carbonated liquids to one degree or another and can affect the grains. Definitely best to just use glass (most hygienic) and plastic.

Thanks for the video, I have been making kefir for a while now but can't get it to multiply. After watching your video, I realise that maybe the juice I add to it is not sweet enough. I did not get on with the milk kefir at all as I did not like the taste and the juice kefir gets alcoholic pretty quick if I leave it out. Not easy to get it right but I will persevere!

I'm allergic to milk, nuts and cocunut amongs other things so kefir is good allround for my digestion. Unfortunately, I can't get it right and it either is too strong or too weak. Maybe due to the weather changing from 10C to 30C in a day lately!

I saw on web search that some kefir growers use thermal bags or heating pads for fermenting but I think the water kefir grains need to breath. Are you allergic to seeds? I think there are recipes for sesame seed & sunflower seed milks, sesame seeds contain a lot of calcium, 100 grams of sesame seed has enough calcium for the daily reccomend dose.

Hi, yes thanks, I am allergic to sesame seeds, don't know about sunflower seeds but I drink rice milk ok. Maybe I should try with that. My problem is that it goes alcolic very quickly or doesn't ferment enough. Is there a good a reliable way to tell when it is ready?

I think with milk kefir grains, it gets bubbley, and with water kefir grains I think it becomes a darker color and I read if your put your ear next to the glass, it will sound kinda like breathing, but am not sure if it the same with water kefir grains :)

You see, I have milk kefir, but I've noticed since reintroducing dairy into my diet after having avoided it for about a month, I'm having some reactions to it, mucous and stuff. If I had some water kefir grains, I could still get the probiotic drink without the milk component and just use my milk kefir in my recipes.

La verdad, eso no sé por seguro, he visto comentarios de que las mujeres embarazadas no deben tomar el agua de los tibicos, y otros que dicen que lo toma en forma mas diluida para reducir la proporción de alcohol que contiene. No soy doctor, y por eso te recomiendo que usted checa con tu doctor y seguir sus recomendaciones. Tambien es mi recomendación por cualqier persona con problemas hepaticas, u otra condición medica.

I got them in México from a friend who was given them by a naturist doctor in Guadalajara...they should not be sold, but are shared by people who have them which is both a humanitarian effort as well as a practical necessity - they multiply if you are taking care of them properly and you end up with more than you need. When we have enough to give away, we post a local ad for people who live close enough to us to come get them. We do not ship them. I'd ask a naturopath doctor in your area.

La primera semana tomando agua de los tibicos suele tener como consecuencia de limpieza del colon, algo bastante beneficial para tu salud. Sin embargo, no debe provocar malestar ni gases en particular, pero si tienes mucha material para mover (para ser discreto) que ha sido pegado, pues puede ser mas fuerte la reaccion. ¿Que tipo de dieta llevas? A mi esposo y yo nos mejoró la digestión, minimizó el gastritis crónica que sufrimos, desinflamó el estómago tambien

Gracias por tus preguntas! Leimos que los tíbicos necesitan aire, y que se puede cubrir el frasco con una servilleta de tela o papel, o filtro de cafe pero los llevabamos de viaje y buscamos una forma mas segura para taparlos, por ende ahi el frasco con tapa perforada. Nunca hemos agregado limón, pero manzana si, y produjo una bebida sabrosa pero normalmente no agregamos nada mas que el piloncillo. No es esencial agregrar un limón o otra fruta, a menos que quieres una bebida con ese sabor.

Es muy cierto, los tibicos producen una bebida fermentada, aunque despues de un dia la concentracion del alcohol es supuestamente solo 1 por ciento...no se hasta cuando sigue el proceso de fermentacion hasta que dejan de funcionar, pero hay mejores beneficios para la salud si lo tomes a menores concentraciones alcoholicas, como de 1 o 2 por ciento.
