I play Guitar Hero 3 with a standard controller, I've completed many of the difficult songs including Raining Blood, Slash Guitar Battle and Cliffs of Dover. I KNOW I could do Capricci Di Diablo from Rock Band 2 if I used a standard controller, but sadly they only allow guitar controllers, which makes me really sad, that's why I searched this. :P

Read the very first annotation and it will point you in the right direction. You need to make a backup of your gh3 game on your pc and then use TheGHOST to replace songs and all that good stuff.

I don't have a modchip in my Wii but I have homebrew and Wii backup launcher. This game that I downloaded from demonoid plays on it but it only lets me choose from 5 songs in the tiers like in the regular Guitar Hero 3 game and I see on here some tiers have 6 songs in them. How do I access those songs?

Those songs are only available in quickplay. Those are coop career songs that would usually unlock when going thru a coop career. So you either have to play a coop career to unlock them, or you can use the cheat code to unlock all songs to play them. Here is the code to unlock all quickplay songs: YO, RB, RO, GB, RY, YO, RY, RB, GY, GY, YB, YB, YO, YO, YB, Y, R, RY, R, Y, O

Well, modchips were the only option at one point, before the Backup Loader and the USB Loader. I have mine modded with a chip, but got it back in 2007.  But now, i use the USB loader, since it's more convenient and don't have to waste DVD's anymore XD

It's because it's quickplay and the scores got mixed up with other customs. None of the scores in quickplay are the right scores. Which is why i create new bands to keep track of the scores. But now we can change the disc id of the game and don't have to do that anymore.
