Hey Gillian, glad to see you're working on your version of Girl on Grill Action (hmm . . . will Food Network will approve that title *LOL*)! You mentioned grill marks, but didn't mention that you can actually create a nice grill pattern on the steak by how it is positioned on the grill bars. By starting at a 45 degree angle to the grill bars, then rotating the steak 90 degrees while cooking on one side, you can create an attractive "crosshatch" design with the grill marks. Repeat on other side.
