Doing what this sushi master did is not only a traditional craft and beautiful, its life. Fish are there for us to consume, all you people are idiots. What an arsehole of a cook. How can someone do that so coldbloodedly to a living fish... absolutely unnecessary cruelty for nothing, just to show off the "japaneseness" of his cutting technique, for whatever he thinks is good about it. If that's what he wants to see more of in the world he'd better get an education before giving masterclasses. This is no ethically viable technique by any standards.

I have to disagree with your post.

Were you expecting the chef to wait for the fish to die of natural causes, say a prayer or two before gutting it?

How do you, personally, ethically kill a fish when any fish you handle has been taken out of its natural environment and is suffocating?

Or is your experience limited to working with fish that have already been killed by someone else?

In either case, what you've posted seems nothing more than a misguided exercise in moral vanity.

@poursuivant1 I would have expected killing the fish as quickly as possibly, assuming you want to kill it at all in the first place. The slaughterhouse equivalent of what this cook is doing would be killing cattle by first cutting of their legs while fully conscious and fully sentient, instead of using the common practice, which would be stunning them with a penetrating stun gun and bleeding them to death while unconscious. Personally I do not kill or eat animals at all in the first place.
